From a resident of the peach state, those look really tasty! Nothing beats Georgia peaches. Chef Tom gives this recipe two shakes of the head at the tasting, meaning it's great!

I freeze mine in the actual quantity my recipe calls for. The same.with other fruits, like apples for pie.

I think the pit pops out so easily because they are Freestone Peaches!
what temp do you guys like to cook your pork to?
Depends on the cut. Chops we cook to 140º, butts for pulling we cook to 195º+, butts for slicing to 170º, belly depends on what we're looking to do when finished.

Is there any consistent alternative to cilantro? I see so many recipes that include yet, but being allergic to it, to me it tastes like soap and fouls every dish it's in. It seems like the easiest solution would be to just leave it out, but then it seems like the dishes are missing an important element to them.
Nothing else tastes like it, so it's best to just leave it out.
I do this with pineapple and add red bell peppers 👌
