One question please while making the caramel if one uses a steel spoon to stir the sugar hardens on it. Which is the right way

Best way is to boil milk in a large container or pot.. then put some sugar as much as 1 tablespoon in a saucepan or even a tawa will do.. as soon as it melts pour into the milk.
Large pot will accommodate the sudden rise of milk, and small quantity of sugar will give the same colour but won't require a spoon to stir ..
