The Valencian paella has an official recipe but we must bear in mind that it admits variations, since the ingredients that were used in each month of the year are those given by nature in each season. Great recipe, except the written ingredients at the end say to use cayenne pepper, this is an incorrect translation of pimenton. They mean to say paprika. Cayenne pepper is very spicy. Other than that, great recipe!
