Pumpkin Pie Mead- Making A low ABV Dessert Mead

Fall is here! And that means many things... but this biggest thing is probably the amount of pumpkin spice stuff that rolls out. Now, I'm not the biggest fan of say... a pumpkin spice latte... but I do love me some pumpkin pie! So.. in traditional Beau style... I turned it into a mead! Cause why not!?! I'm sure that this will be yet another fantastic mead... and, if you make it now.. it could be damn near ready for Thanksgiving! (at least in the U.S.) in Canada our Thankgiving is much earlier... But it's still worth making.. then it can age for next year! yay! If you would like to try this mead, hears the Recipe I conconted for today:
2 1/2 Lbs. Wildflower Honey
1 full gallon of water
5 Lbs. mashed frozen pumpkin
3 cinnamon sticks
2 whole cloves
1 tsp. ground ginger
1/2 tsp. ground nutmeg
1 tsp. Ferm. O
1/2 tsp. Ferm. K
1/4 tsp. Potassium Carbonate
5 g (One packet) Bread yeast
I also will be adding 1 tsp. Ferm O on day 2 and day 4 just to help them little yeasties along.
