How useful and as it turns out a very essential tool, as I happened to, on very morning it came out, catch a 55cm Australian Salmon close to Forster. I know for you blokes it happens regularly, for me a huge buzz and I couldn’t believe the fight. Just didn’t want to throw in the towel. So followed yr video for the filleting part, cut in bigger pieces and just dusted with flour. Pan fried with rice and salad on side. I reckon one of my best experiences of a fish lunch, gee it was nice.

    I bet it's delicious I understand it's not a true salmon

Hey @gdmofo, It's definitely not as prized a table fish as the Atlantic salmon and you are correct, not a true salmonoid species, with many preferring to catch and release the Australian salmon (kahawai in NZ) as they have a bloody and stronger tasting flesh. In saying that if bled on capture and looked after the fillets can be used in many recipes, fish cakes and also seasoned to taste. All the best with the fishing. Cheers, Justin

Never add ingredients to cold oil! Ridiculous
