Ocean Agar Jelly [Malaysian Dessert] with tips!

- This recipe was inspired by a combination of three recipes - A basic pandan and santan agar, flowers in jelly, and the Japanese Kohakutou.

Ingredients
Food colouring:
40 (2g) Dried Bunga Telang (Butterfly Pea flowers)
50ml Water
Clear Agar Mixture:
1L Water
10g Agar agar powder
200g White sugar
2-3 Pandan leaves
Fresh Bunga Telang Petals
Lemon juice
Coconut Agar Mixture:
150ml Water
1tsp (2g) Agar agar powder
1tbsp White sugar
1/2 cup Santan (Fresh coconut milk)

Can gelatin be used instead of agar agar?
Hi Rachel! I've actually never tried using gelatin for this recipe before so I can't say for sure. However, the answers I got from Google said 1 teaspoon of agar powder is equivalent to 8 teaspoons of gelatin powder. In terms of texture, agar agar has a firmer texture while gelatin is creamier and bouncier. Hope this helps!

This flower is often used in nasi kerabu for its blue colour. The plant can be grown in pots at home for our convenience. Creative idea for jelly.

how does the leaves taste like?
The Pandan leaves ('Screwpine' leaves in English - Pandanus amaryllifolius) has a unique mellow like taste. Slightly grassy, with a hint of coconut and a soft aroma. If you're not familiar with Pandan, you could instead flavor your agar agar with some rose syrup :)

Hi Adlina! I'm not too sure if you're referring to gelatin or konjac as both falls under the jelly category.
But to answer your question, if you use agar agar powder that contains konnyaku/konjac, it should be perfectly fine although the texture would be bouncy and chewy. If it's gelatin, I've personally not tried it before but according to a website called 'HowDaily', 1 teaspoon Agar powder is equal to 8 teaspoon gelatin.
