We make a delicious Sponge Cake with Potatoes! Potato Cocas, a pleasure of Gods

- Authentic Cocas de Patata de Valldemossa, a pleasure for the senses.
Ingredients:
- 500 grams of bread flour
- 200 grams of boiled potato (weigh once boiled and without skin)
- 3 eggs
- 100 grams of lard (you can substitute butter or margarine, but they don't come out as rich)
- 60 ml of whole milk (50 gr)
- 50 ml of sunflower oil (30gr)
- 200 grams of sugar
- 25 grams of fresh yeast (can be substituted for 8 grams of dry baker's yeast)
- Glass sugar to decorate the potato chips
Baking time:
10-12 minutes, 170 degrees Celsius with heat up and down without fan. Tray in the center of the oven, or a little lower than the center.
We must be careful that they do not burn us!
