    I've had a pH meter for about a year and a half, but probably only have taken readings four or five times. But I think I will start doing it more often, even for the non-sour ones. Not sure how much it helps, but hopefully will be good to know someday when dialing in the processes a bit more. Cheers!

    Only time I check pH is when doing a kettle sour. I take a reading before pitching the Lacto and as the Lacto sours so I have a reading to know how far it dropped and make sure I hit my target.
    I was told awhile back ago if you take a pH reading during your mash and make an adjustment then you need to note it and make the the adjustments with grains and your water profile the next time you brew it. Sure adding the aldic acid or whatever you use to get your mash on target for the current brew day is fine and bring it into "style" but the next time you brew it you shouldn't need to make those adjustments.
    I like you don't think that it is necessary totally and there is for sure more then one way to brew.
