    For those wondering.
The word Pāyasa "of milk" is a vr̥ddhi derivative of the root √pāyas "milk".
The word pāyasa is used widely in Kannada and the declined for pāyasam in the nominative case is used in Telugu, Malayalam and Tamil.
As we see above, it is also used in Bengali as "paẏes" (পায়েস). The term would be called an apabrahṃśa form. Such variants occur in various languages including Assamese, Odia, Gharwali, etc.
Hindi "Khīr" derived from Śūrasēni Prakrit's "khīra" which intern is derived from Sanskrit "kṣīra", which also means "milk".

In Tamilnadu also birthdays, anniversary and other featival days are celebrated with payasam made from jaggery. We use palm jaggery for postpartum women and girls who have attained puberty to strengthen bones and fight anemia.

Not only in bengal throughout India that was the culture. Cake cutting is something introduced to us by English. We celebrate the birthday by making payasam only. From Tamil Nadu. So happy see someone saying this. Happy birthday.

We make kheer or sewayi. I think in every Indian household , on birthdays mom make some fork of pudding with milk. Although when we were kids for few years cakes were bought bcz we asked for it as some ppl in my colony were celebrating with cake and our colony was like extended family back then. But mostly we celebrated without cake and on birthdays we invited all kids in our colony and served them food which typically included poori, some sabji (birthday sabji were also spicy as everyone loves that),salad, kheer and rasgulla and my mom used to make kaddu raita bcz we loved that. We used to invite everyone but since mainly kids came , after serving everyone we used to go to our neighbour's houses to give food for other family members. That was a norm for anyone's birthday in our colony as everyone anyway made food for their kids birthdays. Now those tradition aren't followed.

Some tips for nolen gur payesh :
    1. First completely boil Govinda bhog rice before adding jaggery. If jaggery is added before, it will slow down the boiling of rice and milk will become thick by then
    2. Put off the flame & cool down the payesh a bit. Mixing jaggery in to boiling/hot milk will curdle the milk.
I have faced the above problems so shared for beginners 😊
