I've been living in Spain for over a year now. Best decision I've made. Having been to both countries Spain and Portugal I never had to think about it. I always knew it was going to be Spain. Choose the country that have the language and culture you cannot wait to learn and feel immersed in it. Otherwise you will be a permanent tourist only wanting to hang out with other expats. Remember any country you choose you would be asking them to invite you to live there. Therefore you'd be a guest. Choose the one the one you can love and cherish.
There's a glut of expat, especially Americans, who are already here.

Si disfrutas tanto la costa y la gastronomía te recomiendo que visites Bilbao y Galicia. Te van a encantar en todos los sentidos! pero el clima allí es más fresco, menos soleado y más lluvioso que en Valencia.
But they are, specifically Bilbao, more expensive than Valencia, and both with a much worse climate, much humidity and colder in winter and with the issue of their own language with a different attitude: there they do speak much in their own language ( Galician and in the other Basque or Euskera) while in Valencia, in whose capital Valencian is only institutional, everyone speaks Spanish
Pero son, en concreto Bilbao, más caro que Valencia, y ambas con un clima bastante peor, mucha humedad y más frío en invierno y con el tema del idioma propio también son más obstinados: allí si se habla mucho más (en un sitio gallego y en el otro vascuence o euskera ) mientras que en Valencia, en cuya capital el valenciano sólo es institucional, todo el mundo habla español

Galicia es de lo más barato de España y las rías baixas tiene el mejor clima de todo el norte con mucha diferencia

But whenever I see these kinds of videos, an old Valencian saying keeps coming to my head:
"De fora vindràn, que de ta casa et tiràn". Which comes to mean: "People from outside will come, who will throw you out of your house."
For example, last year the cost of renting a flat was €400. Today that same rent costs €700/€800.
I do not want to imply that the price increase is due to expatriates coming to retire here.
The fact is that we are used to receiving tourism, the tourist comes, spends the money and goes back home. Now we will have to get used to another dynamic.
I don't want you to misunderstand me, that you will always be welcome here, we always have, we like to see people from abroad value and love this land.
We will retire in another cheaper city or country, I don't know.

En Valencia no caminas a cualquier parte de la ciudad en 30 minutos, corriendo quizás.
Del centro a la playa 1 hora o mas caminando
Del centro a la ciudad de las artes y las ciencias unos 50min.
Esto partiendo desde el centro, de una parte a otra te lleva casi 2 horas.
Ves de la avenida del CID a la playa a ver cuanto te cuesta.
Tienes que visitar las Islas Canarias, mi favorita es Lanzarote .

Anto,valencia tiene el segundo museo de arte de España,solo superado por el prado,se trata del museo Pío V,junto al cauce del río Turia y detrás de viveros. Es muy importante por la calidad de sus obras.

Don't know about in Spain, but in England what makes a cathedral a cathedral is that a bishop has his See there. Otherwise, it's a church, no matter how big and elaborate. Also, a city can only be a city if it has a cathedral, otherwise, its a town.
I visited London in 2000 and visited St. Paul's Cathedral. It's a fantastic cathedral! The acoustics are fantastic! It has a fantastic organ! There was an organ recital. The organist composer, I think was (maybe) French (or was he Spanish?). He assigned notes to colors in famous paintings starting at the top left and moving across he painting. Then he played the results. It was AWFUL! A cat walking across the keyboard would have been better! I was so disappointed at the waste of a great cathedral, it's acoustics & organ! (Same organist visited New York City and traveled across the USA.)

You are loosing Andalucia, Extremadura, Galicia, Asturias, Cantabria, Ceuta, Melilla, Navarra, Aragon, Alicante and Castellón, Basque country, Castilla and León, Baleares and my Lovely Canary Island and those languages, traditions, foods, histories, and cultures.
Knowing that Valencia, Barcelona and of course Madrid are increíble too.

Feedback is so focused on your personal preferences. It would have been more helpful to get some comparisons in cost, eg spending numbers, medical care facilities/availabilities, safety, educational quality/ranking. Sorry, but this was not concrete nor useful information at all. I felt I learned more about you than those cities 😂 which is OK but then you'd have to change the title to Where I find my happiness or so.
Lastly, why are you wearing the mask in some places in Spain? Is it still mandatory?
Por lo que preguntas, seguramente no has visto muchos vídeos de Antoanetta. Ya que los costos médicos son iguales y despreciables en toda España. La sanidad es universal y gratuita. Y si eres turista te puedes hacer un seguro familiar por unos 90€ al mes, que te incluye todo. Nada que ver con USA.
La variación mayor que puede haber entre las tres ciudades son la vivienda y los servicios, siendo Barcelona la más cara y Valencia la más barata. Por mi experiencia unos 300 - 400 euros mensuales de diferencia.
La educación es gratuita en las tres.
Las estadísticas de criminalidad de España son las más bajas de Europa. Barcelona es la peor en ese sentido.
Las infraestructuras son similares. Siendo Valencia la ciudad más pequeña.
La mascarilla sólo es obligatoria en los centros médicos. La vacunación en España alcanza casi el 100%.

I disagree that Spain is a culinary paradise as you say. Probably compared to the USA or the UK, but certainly not compared to Italy or France. You can indeed find nice restaurants in Spain, but I do not find the average food very good and varied to be honest.

Lo siento, no estoy para nada,de acuerdo. Te escribo desde España y te puedo enseñar sitios donde vienen los extranjeros sencillamente a comer bien, buenos vinos, buenos quesos, buen producto local y muy buen precio
Actually the same can be said about France.. not sure what's so amazing about it except Coc au vin and boeuf bourguignon. I personally love Mexican food, Asian food and Middle Eastern.. way more than Italian or French food, and for that London or American West Coast is much better. I personally find French cuisine not fresh enough.. too overcooked, and Italian Is Amazing but.....too many carbs.
French food is more about meat and dairies, Spain is about seafood and little samples of varied and delicious food. aka tapas, ltalian is about carbs mostly
