    Hi Becky!
    I’m French and when something is said to be “confit” it means that, for preservation purposes, something has been cooked slowly and for a long time in grease, oil, or sugared water. “Confit” in itself does not mean grease, it’s what the process is called (comes from the verb: confir) ^^
    Fun fact, here we call fruit jam “confiture” but these are not to be mistaken with “fruits confits” which basically are candied fruits.
    Not sure it was relevant to share all this but 🤷🏼‍♀️😄 (edit: especially since in the meantime someone explained the “confit” as well !)

      Aren’t you supposed to fill up the jar full with the oil - that way it doesn’t go bad..? Mean the garlic confit.. the only reason something goes bad in oil when you preserve is if it’s not filled up and there is air to the thing you want to preserve..

    So yesterday I canned for the first time…applesauce in my new electric canner (bought because of watching Becky). 7 jars…1 didn’t seal. Was a nervous wreck at first, but proud of my first project! Today I made coleslaw using my food processor (new) bought thru Becky’s link. You get what you pay for! Best results I’ve had with any processor! I’m afraid my husband will ban this channel 😅. But he likes the results, so I doubt it! 67 and still learning new tricks🎃. (Learning, not turning.)

    Becky, I love how Josh always says thank you when you prepare something. My husband has always done that too. My father was a great guy, but I never heard him say that to Mother and she would always cater to his taste buds. It just is nice to see good values in such a "take it for granted" society. Love it!

    You can turn the roasted garlic into a purée and make a Garlic Aoli dip/sauce by adding it to Mayo & lemon juice. It’s amazing on crispy Brussel sprouts / breakfast burritos/ quesadillas / sandwiches/ fries etc the list goes on. But it’s amazing! Refrigerator life of the sauce is 7 days!
    Edited to add the recipe I use in my restaurant kitchen.
    Roasted Garlic Aioli
    INGREDIENTS
    2 cups Mayonnaise
    4 tbsp Roasted garlic puree
    2 tbsp Lemon juice
    METHOD
    1. Place mayonnaise, roasted garlic puree and lemon juice in a mixing bowl.
    2. Whisk until smooth and well combined.
    3. Transfer to an airtight container with a rubber spatula.
    4. Cover, label, date and refrigerate for up to 7 days.

    I'm sure you're getting a gazillion bits of unsolicited baby advice, but I'm still going to add my $.02 worth, lol. If you keep doing all of your normal daily routine (noisy) things, ie: drumming, vacuuming, kitchen clanking, dogs barking, talking, etc; when Baby is first brought home, it'll be easier (in the long run) for them to sleep through the ever-present noises of life... And you won't feel like you have to tiptoe through eggshells at naptime ☺. Honestly, the things they're hearing now, are the things they'll be comforted hearing later. Good luck, Friend.

    I have just had an extremely difficult day dealing with some health issues and things and I needed to just stop and take a breather from everything going on and I can't even begin to tell you how thankful I am every time I see a new video pop up from you. It's the smallest things, but you have no idea how cozy and safe it makes me feel every time I hear 'hey friends..' I struggle with depression and it makes it hard to want to cook for myself, but your recipe videos always keep me engaged and give me just that little extra push I need to get in the kitchen myself. I'm going to have to try confit garlic for myself now, it looks so great! Thank you for always being that calming presence for me on CZcams.

      Taylor - me too! She gives such energy and I find myself jumping up and grabbing things to do in the kitchen while she's talking! And I feel accomplished and not one bit tired! She has me prepping and preserving my harvests and doing quick cleanups throwing everything in my dishwasher and moving forward quickly, but calmly. I LOVE watching her to get me motivated.     I once cooked garlic confit at a party. Used half butter & half olive oil, plus a good pinch of salt. And only enough fat to cover the garlic cloves. I took a couple of loaves of French bread so people could rip off a chunk and dunk it every time they walked by. Huge hit. =)
    The garlic confit can also be frozen in a zip top bag in a thin flat layer so that you can just break off as much as you need at a time. (I’m only cooking for one, so this works well for me. )

    Confit is a traditional French cooking method, and originally referred to anything preserved by slowly cooking it in any liquid. Garlic Confit is made as you are doing. I LOVE garlic and eat a clove of garlic daily. I absolutely love your house and all the effort you and Josh have put into it. I can't wait until next spring to see the outside garden and what landscaping you do!!

    Hi Becky, ever since I was a child, (I'm 74 now), whenever a meal was made out of a variety of leftovers, we called it: "make 'em eat it". When asked: "what's for dinner?" The answer is "make 'em eat it." My husband's favorite meals are "make 'em eat it" LOL We both love your videos and have tried your recipes. Thank you for all of your loving work.

    I highly recommend getting a Roomba for your wood floors. It won’t fall down steps and you can train it not to cross certain thresholds. A big time saver and your floors can always be clean if you run it daily. Docks itself back onto the charging station, too. We had one with 5 dogs on the farm and it made a big difference.

    French tip for No-peel garlic : we often cook the clove in the skin, for example in you chicken thigh recipe... Then once cooked the fun it to press out the puree garlic out with a fork. Basically you confit your garlic directly while cooking.

    For getting a low, even heat on a gas hob, you could look into getting a simmermat. It's a kind of cast iron disc with raised areas that distributes heat more evenly to the bottom of your pots and pans. I have one that I like to use for stews, because the gas even on the lowest setting's direct heat still tends to burn a spot at the bottom of the stew. If you do lots of low and slow type dishes on the gas hob I think it may be a worthwhile investment.

      I learned about those from my grandma! They're traditional here in the Netherlands for anything you want to simmer on a low heat for hours on end, including soups.

    Becky I just have to tell you that I cringed when you were walking down the stairs handrails are your best friend it is a good habit to use them especially being pregnant and when carrying the baby when it arrives. Safety first sorry but I'm a great grandma and I worry.

      I fell down a small flight out of my apartment when I was pregnant too. Luckily everything was fine and it scared me more than hurt me, baby was fine, neighbors were a little freaked, but it was scary and I didn't make that mistake again the rest of that pregnancy or the subsequent ones.

      @@ashleyashcraft1754 as did I when I was pregnant and was put on bed rest for the remaining 4 months of my pregnancy due to falling partway down the stairs.. I grabbed the railing as I was falling and shook by entire body and caused the muscles in my abdomin to tear. By the grace of God my son was born full term without issues.

    I bought the silicone Souper Cubes to help with my freezer storage. One of the trays allows you to freeze small quantities. They are various sizes that you can purchase.I have been using that to store fresh herbs that I put in oil. Once they are frozen, you can pop it out of the Souper Cube and then just fill a freezer bag. No worrying about glass.

    Love your videos.
    The garlic needs to be well submerged in oil at all time. This prohibits the forming of mold.
    Usually there is also some thyme, rosemary, peppercorns and salt added to the oil and garlic.

    I love the look on your face when you are patiently waiting for Josh to give a review. Not that you need him to tell you it’s good (because you already know it’s good 😂) but because how much you love him and how happy it makes you to cook from scratch and provide that to your husband!     In the UK when we use potatoes and a green veg fried we call it bubble and squeak. It's a great way to use left overs. By the way I love watching you in the kitchen you are an inspiration 👍

    Hey Becky!! Just wanted to tell you are definitely glowing! So happy for you!
    You could always freeze dry the green part of the leeks and make some onion type powder! I do that with my leeks and the flavor is amazing!
    I made your garlic oil, it really is so good! Thank you for showing us how to make it! It's so easy!

    Ooh love garlic oil. But be careful it only lasts about 7-10 days in tge fridge. It can develop botulism.

      early December - the room they want to set up as a nursery is on the first floor and is currently set up as Josh's office. He can't move upstairs until all the steps she mentioned in the video are completed...they were waiting on the doors to get started. Once the upstairs reno is completed, he can move his office upstairs and they will work on the nursery. She's a minimalist so it's not going to be an elaborate set-up from what she described.

    We did our floors 4 years ago and one of my requirements was no unneeded transition strips. We had all the same floors put on our first floor and several contractors wanted to put strips at each door. I love not having those strips where the rooms change.

    I recently discovered your channel and just love it! The hash looks amazing. It's a great reminder to be creative with whatever is in your kitchen. I buy bulk garlic once a year from California. I chop it up in my food processor, lay it flat in a freezer bag and freeze it. It's really easy to just break off as much as needed. Nothing like garlic!!

    So agree that Brussels sprouts and balsamic go hand in hand! My favorite way to make sprouts is with minced onion, bacon and finished off with a good balsamic vinegar

    Good call Becky...fixing the transition strip. At my age I unfortunately feel every uneven floor. Eventually it could become a trip hazard. Toddlers would also have struggled with it too. You and Josh are making your home beautiful and functional for a family of three.

    Oh Becky the flooring looks awesome! the hubs (Mark) has been replacing ours for the past 2 years and we almost have the upstairs complete!!! Gonna try making my own confit this year too WOOT WOOT! I had same idea for a "party" only mine is gonna be a LOOFAH or LUFFA peeling party!!! Grew only 4 plants and they not only completely covered one cattle panel arch, but also went down our fence above the sweet potatoes another 20 feet! oh and the yellow flowers of the Loofah were so pretty next to our purple sweet potato flowers! I'm thinking we need to convince future dad Josh to give us a drum solo at some point! Josh would you, could you, in your new house???     The floor fix is perfect. Smart thinking on the door transition also! Door for all your closets help keep dust off the items on your shelves so smart to order the doors. Your hash looks wonderful and sounds yummy! Glad you showed how you used leeks and made the hash!

    I make my garlic confit with clarified butter and store it with enough of the butter to cover the cloves. Because butter solidifies in the fridge it also helps it not mold and it last a lot longer then if you store it in liquid fat.

    I am always overwhelmed by how much energy you have especially being pregnant! I loved everything you made today. The garlic simmered in oil is great. We eat quite a few left over meals but I never think of making a mixture of Left overs. I am going to do that more often instead of wasting food that goes bad in the fridge!     I confirm, "confit" is a French word and means not only gently cooked in fat but the word "confiture" is to say "jam" in USA, means gently cooked in sugar.
    Just in case you didn't know, but the garlic puree that can be made with the garlic confit is a great dewormer for animals but also for humans.... My cats love garlic puree. garlic...

      @The Aussie Family For information my cats eat something other than garlic and I treat my cats with garlic puree only when they have worms and even then I only give them a hint of garlic and that is far 30g doses of garlic that are potentially deadly.
      We have to stop panicking people like that without giving precise information.
      Curare is deadly and yet it is used every day in operating rooms.
      You have to know how to keep reason in everything.

    I’m definitely someone who doesn’t like leftovers. My son and partner love them so I always have something to feed my guys but what I try to do is to have a “round 2 and round 3” recipe to make with leftovers. A pork butt roast is a fine example. Round 1, delicious pork roast, round 2 is a barbecue pork sandwich or stuffed baked potato and round 3 is maybe a barbecue flatbread pizza. I’ve also made empanadas with the leftover roast by giving it some Latin love. You can also make the Mexican soup. All are delicious. With my leftover roast chicken I often make chicken pot, chicken pot chicken pot pie. LoL Aging myself with that quote. 😉
    You can put a fried egg over that hash and call it a very hardy breakfast.

    I’ve been able to store garlic confit in my fridge for months with no molding or other problems…what I do differently is make sure the garlic is completely covered in the oil. That hash looked delicious! Definitely adding something like that into the meal plan :)

    Becky you were so smart to have those areas fixed flat in your doorways. I've actually tripped over them and broken my toes. I love making hash. Another meat I use making hash is left over pot roast and corned beef. Placing a fried egg on top of the hash adds a little extra something.

    Confire means to preserve by submerging something and add to its taste. In English it is often used to refer to cooking something low and slow in fat (duck confit is a delicious example of that), but it doesn't have to be submerged in fat. In fact you can confit things in sugar, jams in French is confitures and there are also confit fruits and ginger.

    I've done garlic confit in a Crockpot. It goes all day on high and you don't have to worry about it burning. And yes, it's a powerful smell so it gets plugged in on the patio table.

    My tip for getting toasty, caramelized Brussels sprouts is to put your pan in the oven when you start heating the oven. Then, put the sprouts on the really hot pan cut-side down. It really makes a difference and it isn't any more work.

    One tip for keeping the confit garlic from molding is to cover it FULLY with the oil. I do this whenever my big bag of garlic from Costco 👍 is nearing it's end, I roast it up in the oven, pour into a jar, cover it with olive oil and into the fridge it goes. The oil prevents the garlic from touching the air which is what causes mold and it stays good for MONTHS!! Give it a try!

    Hi Becky! Thank you for the inspiration. I have made many hashes with leftover meats and potatoes, but never thought to use hamburger. And since I just bought leeks at the farmers market on Saturday, I decided that’s what’s for dinner tonight. I did not have “leftover” potatoes, so cooked some carrots, potatoes and garlic in the pressure cooker in beef broth first and added them last. It came out Amazing!
