Trimming briskets isn't easy, but not as hard as most people think. Following for part 1 of 3 brisket videos. Hope you enjoy! - Jak na to + styl
PSA: IF YOU HATE THE BACKGROUND MUSIC!
New Trim Video: czcams.com/video/50sre8uf4tM/video.html
I understand the complaint, but just know that this was one my first video I've ever made, and I've learned how to make better videos since then. So please go watch the other video. Also this is something that took many years to learn and to teach. I hope you can appreciate that I'm giving this information out for free. Haha.
I too have seen many trim videos and have trimmed many briskets. This is the best I've watched. Your explanation as to why you trim each area was great and easy to understand.
I've probably watched a dozen trimming videos including franklin's, Harry soo and Texicana... This by far was the clearest and easiest with your camera angle. Thank you!
Aw man. I appreciate that. Thanks for watching.
Absolute facts. Ive watched a few others and there were too many bad angles, and too much idle banter, this was perfect.

I agree. I am a big fan of Harry Soo and Franklin, but this was one of the best trimming videos I have seen. Very good advice, I do the same.
Video is Great...Music👎
Thanks for such a good video, I’ve watched this video before every brisket I’ve cooked. One of the clearest trimming videos out there!
appreciate it! that means alot. hope you enjoy the other videos as well.
I have watched way too many brisket trimming videos and I have to say this has been the best, straight to the point. Thank you sooo much!!
Thanks so much. I made an updated video last month. Check it out. The entire process is pretty much the same, but I say things in different ways and there are some different angles that may help with your next trim l. Thanks for watching!
Very straightforward and I like how he debunks some methods that i have found don't produce the best results. As a beginner his simple method is making me look like a pro
Man you really simplified that process. Thanks! I feel less intimidated bout trimming my first brisket now
Appreciate you watching! Hope you enjoy my other videos.
My husband and I bought I huge brisket yesterday y. Needless to say I had no idea how to trim it. Watched your video and said I can do this!! Had two minor cuts but on whole I did great🤗. Thank you for making it clear on how to cut it 😊
Awesome! Let me know how it turns out!
Awesome video. I’ve trimmed and smoked over 20 briskets, and read a lot and watched instructional videos, but I definitely learned from your vid.
one of the best step by step brisket trimming videos I've seen, thanks! can't wait to see the next brisket videos you have coming
thanks! hopefully it'll help. share it with other bbq ppl you know!

Great video, and as a lefty it was nice to see how somebody does it - Thank you so much.
Watching brisket trims are very satisfying
Agree with some of the other comments. Probably the most informative brisket video I’ve seen. Thanks for sharing your knowledge with the rest of us.
thanks for watching!
Bro, best video I’ve seen breaking down exactly how to trim a brisket. I’ve got a prime packer from Costco I’m smoking tomorrow and I’m going to follow your instructions exactly. Thanks so much for taking the time to make this video.
thanks for watching
This is the best brisket trimming video I’ve seen. Well done! I’ll make sure to share it to my bbq groups.
Thanks! Appreciate it.
I think this is the most helpful and detailed brisket trimming video I’ve seen. My skills are improving with every brisket
Aye! That’s awesome. Glad to hear it. The video will always be here for you. Haha
Came across this video by chance and glad I clicked. By far the best and most informative brisket trimming video I've seen. Just subscribed and about to binge your videos. Thanks for the info and instruction!
ha! thanks. appreciate it.
I’ve watched this video multiple times and tomorrow I’ll be trimming and smoking my first brisket in my big green egg. Thanks for making this video, best one on YT about trimming in my opinion 👍
awesome! good luck!
Excellent trim vid Joe! Always learn a something new. I enjoyed your Terry Black and Truth vids as well, looking forward to more thx 👍🏻
appreciate it! thanks for watching.
This is the best simplistic video on trimming, so many videos' people are just going off the deep end and have excellent camera angles where you can't see what they are doing lol, not even talking about the brisket lol, this was so easy to watch and understand. Kudos.
Appreciate it. Hope it brings your brisket game to the next level!
@@knoxavebbq it will my friend 🤙🏼
Great Video, looks perfect BUT now we need a video on how to use the trimmings. What fat is garbage, what goes into hamburger...
Use the fat to make beef tallow. You can use the tallow to baste your steaks or even squirt some on butchers paper and wrap your brisket while it rests from smoking.
Very educational video....learned a lot on trimming a brisket!!!! Thank you!
Great video, from front to back, top to bottom this is all around the best video on CZcams for how to trim a brisket!!!!
Appreciate it. Thanks for watching!
This was perfect. Super simple, great execution and explanations. Thanks man!!
Thanks for watching! Glad it helped. Make sure to subscribe for more videos like this! Happy holidays.
i’m never gonna do this in my life it’s just satisfying to watch
nah,you won't be satisfied till you do.Probably every weekend
Found you through Brad's channel. I gather you've cooked at a lot popular joints in/around Austin and learned from them. That's pretty awesome. Love your trim job. Super clean and slick. Watching Brad trim briskets has really upped my product and yours came out very similar to his. Subbing.
Appreciate it. Yup. I’ve been very fortunate to with some guys ppl and places.
Thanks. I watch this each time I have a brisket to trim. Works out great!
Glad it helps!
WOW! Trimming a brisket is much harder than it looks. Repetition is key. Great video!
Ive been smoking briskets for a couple of years now. And i always come back to watch this video, every time. Thanks for doing this video!
Thanks for watching! Hope you enjoy my other videos as well.
Mighty Joe thank you my man. Very enjoyable watching you trim and hearing your thought process.
Thanks so much! I appreciate you watching. Be sure to check out the other parts to my brisket process and my other cooking videos!
Thanks Joe, I've also been trimming & smoking meats for the last decade. I've always hated showing friends & family on how to do it. But now I'll refer them to your channel & have them subscribe.
I for the first time at 60 just cut 4 of these today. Since there are only 2 of us I ended up with 3 biscuits and the end piece was trimmed for a cornbeef. So all together we got 12 briskets and 4 cornbeefs. It was half the price per pound uncut. We also picked up 2 whole top round sirloin, 2 whole bottom sirloin, aka tri tip which I cut up. All of it half the price of pre cut. While it took me 6 hours im pretty proud I was able to do that after watching some great how to videos here. I've done our own game animals for many years but its not the same at all. I also ended up with a pack of steak bites and 3 pounds of stew meat. Im exhausted now but content. My better half did all the vacume sealing. You most certainly a second person to butcher that much in one day. Thank you for encouraging us.
that's awesome. it's definitely a lot of work and something to take pride in. thanks for watching!
@@knoxavebbq thank you for such great teaching!
That means a lot. I appreciate it. Let me know if you have any questions.
I have been watching BBQ videos for months, first one that took the time to actually explain the difference between the point and the flat. Thank You.
Glad I could help. Thanks for watching!
Gotta say, I’ve watched probably 5 other videos on this process, and im still not sure of myself. After watching your video, I had the light bulb moment. Great communication and description in your video. Job well done, thank you….I just wish I had found this last night before I butchered the packer brisket I just pulled off the smoker.
I appreciate it! Haha. It’s all good. Now you have it for next time. Thanks for watching!
Great video on how to trim a brisket. By far the best on YT. The music was a bit annoying. So I just turned off audio and watched again.
Best brisket trim video on CZcams currently. Please post more videos :)
i appreciate it. you know, quality content doesn't come out very often. haha. jk. it's just alot of work on my end. normally the time it tastes me to trim a brisket it 5 mins, but just to film and edit took about a week. i will try my best though.
Loved this video Joe! I've always felt wasteful or just afraid of cutting too much but your explanation was super clear and made sense. Plus now we have a meat grinder for the trimmings so I'm paying more attention to trimming the brisket down correctly now. Thank you!

It's possible that I missed you mentioning this, but I have found that trimming while the meat is right out of the fridge is much easier. That cold firm fat cuts very clean, but once it warms up, the fat gets jiggly and wants to move around quite a bit. Thanks for the vid!
yup! you're right about that. if mine warms up too much, i'll just wait to do it later after sticking it in the fridge, unless im really pressed for time.
One of the best if not the best trim videos I’ve seen
Appreciate it
I just bought two 13-15 lbs whole briskets and I am trimming them tonight. I don't have a boning knife but hopefully I can achieve these beautiful results. Will have to check out if you have a video on slicing cooked while brisket. Once I get to the point end, I lose all sense and reason.
one of the best trimming videos i seen thanks
Awesome.so happy to hear!
Awesome, thank you for this video. Absolutely the best video on how to trim a brisket. Let’s just say my first brisket, prior to release of this video, was, well not so good. I thought I did well with the cook time and controlling the heat in my smoker. I just did not do well in my trimming process.
Awesome! We all gotta start somewhere. If you have an Instagram, post a picture and tag me in it so I can share with others!
Great video!!!
Thank you, Joe.
Please keep the videos coming.
Great video, I have way more confidence now in trimming!
that's what the video is for.
Smoking my first brisket this week. This was really nice to watch. Easy to follow. Now to pray that it turns out well.
Well?!?!
Neat Kerns Kerns My little sister tasted it and said I was hired for her birthday. My in-laws told me I can cook a brisket every week if I wanted to. So I’m guessing it was like all around. Lol
Thanks for the clear and entertaining instructions….. I’m gonna try my hand at cooking a whole brisket soon … so your video will come in handy 😊
Woohoo! Good luck! I also have an updated brisket trim and FULL brisket cook video that I poster earlier this year. Hope it helps.
Thanks for such a detailed explanation of the trim!
Appreciate it. Thanks for watching!
This is the best I've watched. nicely done man!
Thanks for watching!
Because of the way you took the video overhead, this made it so clear. I wish Franklin did his this way,
I appreciate it. Everyone’s trim is pretty much the same nowadays so this is pretty much what he does with my own little tweaks. Thanks for watching!
Probably the best video on timing a brisket. Thanks.
Appreciate it. I’m hoping to make an updated one soon
As a lefty this is great! Great overhead view also! Thanks
Glad to help. Thanks for watching!
Thank you Joe !!! Can't wait on How to slice a brisket and some more tricks !
Such a great detailed video Joe great job. Can wait for the cook a brisket like a pro video haha.
Thanks man. Appreciate it.
I use a longer straight carving knife and cut when pulling the blade. Enables me to have a longer cutting and flat surfaces.
whatever work! i've seen alot of ppl do it. i'm just faster with a shorter knife, but it looks super cool using a carving knife. haha.
I loved the music lol. And you slapped the brisket at the end, so I know you know what you're doing
LOL! youre in the minority with the music choice. i like it too. :D thanks for watching.
You made it look easy! Thanks!
It just takes some practice. Thanks for watching! Hope you enjoy my other videos as well!
Great vid! I need to find one that covers what to do with all of the trimmings. I'm sure we don't throw it all away!😄
Burgers and sausage. I have a couple burger videos and a Polish sausage video that’s pork, but you could do a 50/50 mix
@@knoxavebbq Thx and I meant to subscribe, so I'll fix that mistake now!😁
I'm a lefty as well, so this was very helpful. Thanks for this.
I’m doing it for all the lefties out there! Haha. Appreciate you watching
Great point of view for the camera, really helped me see every angle
Appreciate it. Thanks for watching!
Great instructional video! I’ve smoked two briskets so far and trimming has been far and away the most daunting step. Your instructions really helps simplify the process. One question though, what is your recommendation for a good knife sharpener? I realize a sharp knife is key to easier trimming. Thanks again for the video!
Awesome! Glad it helps. Depends on if you have a nice knife, I would get it professionally sharpened. It’s not super expensive to do so. I even do it for my cheap knives. But I do use a honing rod every 3-4 briskets if I’m trimming a bunch of them. Hope that helps!
Nice work, good tutorial. And finally, I can see a lefty trim a brisket! 😁
Yes! Lefties for the win! Haha.
@@knoxavebbq Haha! You know it! 👊
Great video - avoided over-complicating. Thanks!
Appreciate it. Thanks for watching!
와 멋져요 ..... 꼭 해봐야겠습니다 ^^ 감사합니다
Excellent instructions, thank you
appreciate it! hope it helps!
This video was so good and informative, that I actually was able to bear that atrocious background music and get through the entire video. Thanks man!
I'd like to know your pre and post trimming weights.
Excellent tutorial!
Yep this is the best brisket trimming video on the net
appreciate it. and also sorry about the music. LOL!
For a lot of newbies, the hardest part of trimming is seeing how much is actually trimmed off! The end results is what we strive for but when people are paying premium for a big brisket, it's scary to trim so much. But, I like the way you do it and WHY. Every brisket is different, so I suggest people not worry about how much they trim because it's the end result that you are looking for, not the size of the brisket. Good job!
Grind it.
Awesome video!! Best informative video thus far. I'm starting this smoking / business dream head on and this helps tremendously.
That’s what it’s there for. Thanks for watching!
Thanks Joe. Much appreciated
Very nice explanation. I’m inspired.
appreciate it. Thanks for watching!
Best video on CZcams period!! 🔥🔥🔥🔥
Haha. Appreciate it.
Thank you, great video!👍 Throwing me off with your left handed cutting lol 😂 My dad was a lefty
Great video! Learned a lot!
Great video! I’m not sure why, but I really want to yell, “HAPPY NEW YEAR!!”
😄
Nice Video, Great Job and very helpful, Thanks!!!
That looks Awsome, great instructions. Gonna try one this weekend (Walmart)!
Sweet! Tag me on IG @knoxavebbq
Well explained. Thanks!
What's this?!? You're being too nice to the haters in the comments, I had to stop watching!!!!
Lawl, kidding. This was a good vid. I was also annoyed with the music but I hung in there for a useful, detailed explanation of how you trim your brisket. Much respect for not sounding off at the rudeness in the comments! Everyone's a critic.
That finished product is stunning! Just a perfect shape, looks like it's ready to fly to Alpha Centauri.
there's enough hate in the world. i dont want to contribute to that. haha. thanks for watching.
Where do you get your briskets from?
I like the way you trim it🎉
Appreciate it. Thanks for watching!
Great camera angle and explanation. Cheers
Thanks for watching It!
I absolutely love this video. Thanks for not being a douche about your technique.
I love the video dude!!! Thanks so much
thanks for watching! just wanna make sure all the work ppl go into a long cook doesnt go to waste. please share the video with other ppl who may enjoy it!
This was an excellent tutorial. It's better than Franklin's video. Beef Tallow and Brisket burgers could be made with the trimmings. Thank You.
Appreciate it! Yup. Definitely. Hope you get a chance to check out my other videos!
@KnoxAveBBQ thanks for this video. What do you do with all the trimmings?
You can cut it up into stew meat, or if you have a grinder, sausage or anything you can make with ground beef.
@knoxavebbq great ideas, thanks again. Im going to try my best with some of this knowledge you've shared with us! Have an awesome day!
@@Bruzumi i appreciate you watching. dont worry if it doesnt come out exactly like this. you'll get better and better the more you do it!
Would be GREAT to see what you are gonna do with all of the trimming. Especially the parts with a lot of good meat.
Agree - great video, but a lot of meat was removed in the process and ideas on how to best utilize that would be much appreciated! Thanks for all the effort into a very informative video!!!
Great instructions!
Thank you! Appreciate it. Please subscribe if you haven’t already for more videos to come!
do you recommend a flexible blade or a stiff one for a boning knife?
I like a little flexibility in the blade.
Exactly what I wanted to see. Will follow the same method on my next brisket. Thank you
Hey does anyone know where to get some butcher paper in California?
Great trim video!
Thanks for watching!
Really great video. Subbed!
I just started watching your videos. I'd like to see a video of what you do to your trim bucket.
Burgers, sausage or anything you would do with ground beef.
Question WHat do you do with trim fat!!!!!!!! After trimming?
Soft fat for tallow. I have a video of how to render it. The hard fat for sausage. The meat can be used for sausage or burgers if you have a grinder. Or you can cube it up for some stew meat.
I actually liked the music. Happy Holidays, y’all.
🤣🤣🤣👍
Best trimming video
I have a new video trim video just in case you want to see another version. Thanks so much for watching
New subbie. I scalped a few but they still tasted good. But that brisket has a nice shape.
Very well explained. I just discovered you, subbing. Looking forward to your future videos. 👍
Appreciate it! Thanks for watching.
I’m a lefty also and people get nervous when I’m cutting with a knife.
Another lefty! Haha. Hope this helps. Thanks for watching!
