    for anyone wondering, I put this meatloaf together just this afternoon, and served it for dinner tonight. I followed the recipe exactly, and it is the best turkey meatloaf I have ever had. Even the glaze is delicious. Try the recipe even if you don't like turkey. Wow ! This is a gamechanger. Thanx, ATK !

    Best meatloaf ever. Flavooooorful! Right up my alley. I’m a good judge of looking at a recipe on tv and knowing it would be delish. I followed this recipe exactly as shown. Moist and perfect in every way. If u like flavor, this is for you!!!!i wrote this recipe down in my recipe book. I used 85/15 turkey. I would use this recipe with ground beef as well. I’m blown away!!!!!!!! Never knew turkey would taste so wel!!!

    Thank you very much for this delicious recipe. I made this last night and my husband was so happy to be able to eat meatloaf again. He had 2 heart bypasses and we had to change the food we used to eat. He always thinks he is so deprived, because he can't have his triple burger anymore.     I used this as a starting point but made some changes… added some finely chopped celery, some more spices, including some poultry seasoning, garlic and onion powder. Didn’t have the mustard so omitted it and swapped adagio for parm (it’s what I had). For the glaze, I used cranberry sauce (had about a 1/4 c leftover), ketchup, brown sugar and some balsamic - and cranberry goes fantastic with turkey. Came out moist and delicious. Thanks Test Kitchen, for the corn starch and oatmeal tip, made all the difference.

    Have made this recipe a couple times. It's a few more steps than you might expect for meatloaf, but it is SOOOO good.

    I will try but adjust the brown sugar. On a diabetic management program and this looks like a fabulous recipe. I do use a lot of dark ground turkey.

    Just made it tonight. I even overcooked it and it was still moist and delicious.
    Great recipe. I modified the glaze by adding two tablespoons of prepared hot horseradish.
    Yum yum meal. I also made a 3 pounder because that’s what Costco sells. That’s probable why I overcooked it. But still great . Thanks

    I've made this MANY times now, and everyone has loved it so far. I end up with a bit too much glaze though; i don't use it all, sometimes only like half, and even that amount is still very sticky by the time it's done. I think it might be good to try getting it a bit more caramelized one of these times that i make it again, but either way, it's still entirely too good.
    Make sure to watch the temperature towards the end to get it out at 165 though; the one time i let it go too long it shot past and was a little drier than usual.

    About ten yrs ago, I made turkey meatloaf using your recipe from back then. Frankly, I hate turkey meatloaf. But...by simply adding Worcestershire sauce and Dijon mustard, that made all the difference in the world!
    I’ve been vegan for seven years now. I have vegan Worcestershire sauce and mustard in the fridge. Hmmm...seitan roast with those two ingredients sounds quite good!

    I'm dairy allergic, and so went with bacon fat instead of butter, nutritional yeast plus some salt for the parmesan. All other steps the same. It was delicious, whole family loved it.

    Made this a couple of times and you could NEVER tell it was made from ground turkey. This is definitely one of my go-to recipes.

    Onion, butter, baking soda, salt. Soften. Garlic, thyme, cook garlic down. Add 2 tbsp Worcestershire sauce, wait reduce down. Put in large bowl. Now mix in 2 egg yolks, 2 tbsp dijon. In a separate bowl, mix 3 tbsp quick oats, 2 tsp cornstarch , 3 tsp salk & pepper. Now mix everything, fresh parsley, 1/2 cup parmesan. 2 lbs dark meat Turkey.
    Glaze
    1 cup ketchup
    1/4 sugar
    2 tsp Cider vinegar
    1/2 tsp Hot sauce

    I shouldn't conjecture, but I find that adding chopped mushroom helps moisten any meatloaf recipe.

    This is an excellent recipe. I messed around with the spices and cooked some peppers with the onions, we all do that stuff with recipes. Followed the recipe otherwise and the texture and glaze were perfect. Used 85/15 turkey.

    I made this Meatloaf with changes - first I need a larger Meatloaf because of the number we feed to made it all 50% larger - with 3 pounds of meat. However- we always add minced celery to meatloaf in addition to onion - and I added the celery to the onions in the Fry Pan first. ANd instead if using a Glaze- we always wrap our Meatloaf in Thick sliced Bacon - too. ANd THAT works really well. I was surprised that there was no real Panade in the mix - but I guess the Oats takes the place of that.

    turkey loaf, step 1 - we're adding 3 tablespoons of butter...to make up for the missing high fat/high saturated fat content of beef that makes people 'swap in' turkey to start with...

    Surely one of the primary reasons people sub out turkey for beef is to reduce fat. Wile I'm sure using a higher fat turkey and adding butter makes for a much tastier end product, doesn't it defeat the quest for low-fat? Any suggestions on how to keep one's turkey low fat AND tender and tasty?

      I am personally not the biggest fan of corn, but some of the best that I've ever eaten was freshly picked from the stalk, and grilled soon after, still in its husk. The husk develops a nice grill-marked char and protects the fresh kernels while they cook from the heat and the steam that's caught inside. Once off the grill, carefully shuck the corn, slather in real butter, add salt and pepper to taste, and eat. Very simple. But sometimes the simple recipes are the best.

    I have a few critiques with this recipe. Replace the oats with fresh brioche bread crumbs, add 1 egg, and a little bit of milk. You only need to rest for 10 minutes, and it will be much more juicy. Oh and Worcestershire of course.

    I almost always use rolled oats in my meatloaf - beef OR turkey! I also use marjoram in turkey meatloaf instead of thyme.

    The texture of the meatloaf was perfect. The glaze was delicious. But I thought the flavor of the meatloaf itself was bland, bland, bland. That surprised me. I thought it would have more punch with the Dijon mustard and the Worcestershire sauce and the cheese. But the flavor was just boring. If I made this again, I'd do something like maybe make it with salsa to punch up the flavor.

    I love turkey meatloaf because I can't eat any beef. Along with that I can't have tomatoes either. I will try this recipe but substitute a white sauce or mushroom gravy.

    hm, looks good and i'm excited to try it out! but i had to replay a part of the video when the turkey came out of the oven after what looked like only 40 mins fully cooked. though it was explained, it would have been more clear a video had you shown Becky applying the glaze the 2nd time and would have only taken an extra 10 seconds.

    At 160 degrees it's too dry. Did it 3 times. Take it out at 150 cover with foil and rest 10 minutes. The temperature will go up to 160 degrees. That's done!

      ehhh, i'm not sure, perhaps if you wanted them to stand alone or to coat with glaze. usually for turkey meatballs you want them to taste good in marinara. i never add dijon to my turkey meatballs. i use egg, breadcrumb, garlic, onion, parmesan, salt, pepper.

      I can’t speak for the ATK but I have used this recipe for turkey meatballs and even turkey burgers and it’s equally amazing. Though you may want to add sautéd mushrooms if doing burgers.

    Is it sanitary to dip that brush into the glaze and rub it on the raw meat and then save the rest to use on the finished meatloaf? Cross contamination hazard?

      The second application gets baked another 35-40 minutes, no glaze is uncooked.

      If it's that much of a problem for you just separate half in 2 bowls and use one for the first glaze and the other on the second glaze.

    I only make turkey meatloaf. I do nothing special and it always come out beautifully. It looks like regular meatloaf in appearance. Recipe is the key.
    TURKEY MEATLOAF B 375* 60 min
    TRINITY: 1/2 onion, 1/4 bell pepper, 2 celery stalks: FINE chop raw
    2 lb. ground Turkey
    1 cup of the TRINITY
    1 6oz can mushroom bits chopped
    3/4 cup crackers/bread crumb or herb stuffing
    1/3 cup ketchup to add moisture
    1 tsp. dried basil
    1 tsp Worcestershire sauce
    1 large egg
    1 tsp. paprika
    1 tsp. garlic powder
    1 1/2 tsp. salt
    1/2 tsp. ground black pepper, mix well shape & cook in a loaf pan
    Alternate: Turkey, Trinity, Herb Stuffing, Ketchup, Worcest. Sauce, Egg. FOR KABAB MEAT LOAF add sumac and turmeric or Zaatar
    ==MEATLOAF SAUCE SFT-SMR 20min
    2 tbsp butter, 1/2 cup of the trinity sautéed 
1 cup ketchup, 1 tbsp cider vinegar

    . Please share you receive for veggie burgers. I’ve been surprised by the reaction to beyond meat and checking you tube most of the top cooks have moderately difficult to difficult methods of preparation But, at 12.00us dollars per pound for beyond meet its worth trying a home receipe . Remember when you did the Harvard square test of your home made brownies v. Packaged. How about Beyond Meat, v. The ATK receipt?

      It doesn’t work, texture-wise.
      One thing I’ve found after years of reading and making ATK recipes, they’ll make something 40 times (no joke!) till it’s right.
