- Want mac & cheese but don't have a lot of time to prepare? Frankie shows you how to make the fastest AND most delicious mac & cheese in under 6 minutes.

INGREDIENTS
1 ½ Tbsp butter
1 shallot, minced
1 cup small elbow pasta
1 cup chicken stock
½ cup fontina cheese, grated
½ cup cheddar cheese, grated
1 Tbsp cream
1 Tbsp minced chives
RECIPE
Heat a pan over medium-high heat.
Add 1 tablespoon butter and the shallots. Sauté until fragrant. Add elbow pasta and ½ cup of chicken stock.
When the stock is evaporated, check the doneness of the pasta. If it needs to cook longer, add the other ½ cup of chicken stock.
Once the pasta is fully cooked, add the shredded cheddar and fontina.
Once the cheese is melted and incorporated, add ½ tablespoon butter and the cream to finish. Top with chives.

what i really like about this is not the amount of time that this mac and cheese takes, it's the amount of pots that i don't have to clean after making it....

Not a single recipe of his that I've tried that my husband and I haven't loved. He is clear and concise without being condescending or aloof. Watching his tastemade clips feels like you've popped into his kitchen for a quick second to get some help with dinner and it's lovely every time.

Hey Frankie! You're an awesome chef and I like your videos a lot, however I feel that you could improve on your public performance. Like for me it lacks a little bit of charisma and confidence. Not that you don't have it, in fact i dig it all the time, but I think general folks wouldn't. Take Elon Mask for example, he speaks in a modest manner like you do, but he is always so confident and funny in his voice. _P.S. I know you're already a recognized expert and who am I to judge, but I think everyone can and should improve (everyday in our life). I have the same problem btw! Take care :)_

+Leo Nawroth I disagree with max too! I love the way Frankie presents. It's calm, cool, collected, and also charismatic. He doesn't act extra the way giadda and Laura vitale too because that's not his style! It reminds me the way a family member would teach me how to cook :)

dude dont forget, the starch is in the pan now, and not on the drain, it works like a natural thickener. Also dont forget to get the water to taste like the ocean... Im one year late with this response.

I've been making a one-pot stovetop Mac & cheese by boiling the pasta, draining it, then quickly sautéing scallions or shallots in butter in the pasta pot, adding the sliced cheese, cook for like 30 seconds then add some white wine (for "kirsch" to make the cheese blend like in fondue), finally toss the pasta back in. it's pretty decent. but this looks better!!! I can't wait to try it!!
ps can't believe I've been wasting my "liquid gold" all these years!!! I had read about using pasta water for sauces but never got any good results from it before. it made my sauces too watery. but I watched a few of your videos via a HuffPo article and you make it look so easy!!

It's interesting how things change over the years. I've been cooking macaroni in water, and tipping it down the sink for decades. Now they have discovered a new way, that saves time! I'm definitely going to make it Frankie's way from now on. But I'll add a little bit of mustard and loads of lemon juice, and use a really strong cheddar, such as Canadian, Davidstow, Colliers, Tickler. I'm not that keen on stringy cheese, so I'll melt it gently.
I made this. It worked better than expected-I liked the shallot. It needs small pasta though; I used large shells, because that was what I had, and it took multiple cups of stock to get it cooked. Kids ate it, and it didn’t have the floury taste some mac & cheese recipes have.
Follow up: this is amazing ! I used some beef stock and beer bc that's what I had on hand, and it was so good! Used sharp white cheddar and sprinkled some blue cheese at the end..My husband won't let me make it any other way now. Pure perfection! Thanks again for this amazing one "pot" dish!
