- Mama Mia! Tickets to Italy may be expensive, but Frankie’s dishes are anything but. Enjoy Italy, for under $2.
Gnocchi With Prosciutto and Peas-
Ingredients:
• 2 to 3 medium russet potatoes, washed
• 4 slices prosciutto
• 1 large egg
• 1/2 cup grated Parmesan cheese
• 1/4 cup ricotta cheese
• 2 1/4 cups flour, plus more for dusting
Sauce:
• 3 butter packets (2 tablespoons unsalted)
• 1 small shallot, diced
• 1 cup heavy cream
• 1/4 cup grated Parmesan
• 1 cup frozen peas
• Salt and pepper, to taste
Steps:
1. Preheat oven to 350 degrees.
2. Place potatoes on a sheet tray and cook until easily pierced with a fork, about 60 minutes. Remove potatoes from oven, let cool until easy to handle. Peel potatoes and let cool.
3. Line a sheet tray with parchment paper. Place prosciutto on parchment. Bake until crispy, about 8 to 10 minutes. Set aside.
4. Grate potatoes until fine. Make a well in the center of the potatoes, add egg, Parmesan and ricotta cheese. Whisk egg and cheese together until blended. Using your hands, gently mix with the potatoes. Add flour 1/2 cup at a time while folding together. Do not over work, this makes the dough heavy.
5. Dust work surface with flour. Form dough into a 1-inch-thick round. Cut into 1-inch strips. Roll each piece into a log. Cut into 1-inch pieces. Using the back of a fork, slightly press gnocchi and roll down to make ridges. At this point you could freeze the gnocchi if you want to.
6. Bring a large pot of water to a boil. Add a generous amount of salt. Cooking in batches, drop gnocchi into water and cook for 1 minute; gnocchi should rise to the surface when done.
7. In a large skillet on medium-high heat, add butter. Saute shallots until tender, about 3 minutes. Turn down heat, add heavy cream, simmer for 1 to 2 minutes until slightly thickened. Stir in peas and Parmesan, simmer for 1 minute. If sauce is too thick, add 1/4 cup of pasta water at a time. Add gnocchi and toss. Salt and pepper to taste. Divide between 4 plates. Top with crumbled crispy prosciutto.
Crispy Pan-Fried Chicken (aka Chicken Milanese)-
Ingredients:
• 2 (4-ounce) skinless chicken breasts, thinly sliced
• 1/2 cup Italian breadcrumbs
• 1 tablespoon grated Parmesan
• Zest of 1 lemon
• 1 1/2 teaspoons kosher salt, divided
• 1 teaspoon black pepper, divided
• 2 mustard packets (1 tablespoon)
• 2 mayo packets (1 tablespoon)
• 1/4 cup vegetable oil
Topping:
• 3 cups arugula
• Juice of 1/2 lemon
• 1 cup cherry tomatoes, sliced in half
• 2 tablespoons shaved Parmesan
Steps:
1. On a large plate, mix together breadcrumbs, Parmesan, zest, 1/2 teaspoon salt and 1/2 teaspoon pepper. Set aside.
2. Butterfly chicken and gently pound to 1/4 thick and even. Place in a bowl and add mustard and mayo and toss until fully coated. Dredge in breadcrumb mixture, gently pressing down to adhere breadcrumbs.
3. n a skillet on medium-high heat, add oil. When hot, add chicken and fry for 1 to 3 minutes on each side. Remove to a towel-lined plate.
4. In a small bowl, add arugula, tomatoes, lemon juice and 1/2 teaspoon salt. Toss. Plate chicken, top with arugula mixture and shaved Parmesan.
White Bean, Sausage, and Spinach Soup-
Ingredients:
• 2 tablespoons vegetable oil
• 9 ounces ground sausage
• 1 large onion, chopped
• 2 large carrots, peeled and chopped
• 3 celery stalks, chopped
• Kosher salt
• Black pepper
• 1 (15-ounce) can white beans
• Rosemary sprig
• 4 cups chicken stock
• Parmesan rind
• 4 cups baby spinach, roughly chopped
• 1 teaspoon chili flakes
Steps:
1. In a large stock pot on medium heat, add oil and brown sausage. Remove and set aside. Add onions, carrots, celery, salt, pepper, beans, rosemary sprig, chicken stock and Parmesan rind. Increase heat to medium-high, bring to a simmer, cover and cook for 15 to 20 minutes, until vegetables are tender.
2. Remove rind and rosemary sprig. Using an immersion blender, blend half of the soup, leaving it chunky. Add cooked sausage, spinach and chili flakes. Stir until spinach is wilted. Serve.

Some people love Gordon Ramsay, Nigella Lawson or Jamie Oliver. But me, i love Frankie.
I love this series...
Tell Frankie he is my cooking waifu
I want him to know that
I now know that
@@FrankieCooks Seriously though, you are great to watch, wonderful charismatic presenting, keep up the good work dude.
A great way to get cheap "Italian sausage" is to buy your Italian seasoning separately and add it to a cheaper protein!! Tastes just as delicious for a fraction of the price :)
dude how many lines of coke do you have to do to be this energetic
(pssssst! check the packet drawer _> )
$1.98 worth of coke
I think it’s just the sugar from the packet drawer
I think he is on steroids.
MrMrCario he chops it from the brick so it’s ‘cheaper’
Tatsemade crew- Frankie, we are filming the Italian recpies ep today.
Frankie- @4:08
Frankie I love your cooking shows, can you bring back Frankies' World, I miss it!
when he said i love you my heart felt it
Immersion blenders are the best! Pro tip: you can totally use it as an electric whisk for stuff like cake batters. And for whipping cream, if you use a narrow & tall container!
If you can splurge (or wait for Black Friday or the holidays), an immersion blender with extra attachments is AWESOME - mine has a balloon whisk and a small food processor. If I were buying one (the one I have was a gift), I'd save up to get the kind that comes with both a mini and a largeish chopper/food processor attachment, just to make life easier, but I'm so happy with the one I have that I'm not getting a new one until this thing dies 😁
Mind sharing what kind yours is? Something like that would be amazing, especially since a lot of sale times are coming up.
You are amazing! These videos are so well made, entertaining, and ... bargain! Score!
Pasta cooked in olive oil with peas, bacon and some parmesan. My favorite struggle meal
Was ecstatic to find an immersion blender for $2 at a yard sale this summer. Can't wait to try the white bean soup recipe with it!
Love anything Frankie hosts! My fav
Frankie makes me happy! Thank you. Best episode yet.
frankie's italian is everything
The two best known “holy trinity” mixes are sofrito and
mirepoix. Sofrito is onion, celery, and pepper. Mirepoix is onion, celery, and carrot. He made a mirepoix.
He made an Italian Soffritto, he just spelled Soffritto wrong for Italian.
love you too, Frankie!
The only reason i watch Tastemade. Frankie, we love you, you're the best !
He's in his natural habitat.... so beautiful *wipes tear from eye*
Thank you for this video! I love Frankie's personality lol

Love All of your vlogs! The Italian in new loves the care and love you put into and have for your cooking! I also VERY MUCH Appreciate that give the reasons behind why you do things a certain way and also explain some of the science if you will about things! As a someone that worked in a kitchen anoint half of my life, but have been out of that world for a while, your vlogs have reminded me how much I love cooking as well as taught me so very much so thank you!!
I love you boy.Your a great teacher.

Frankie is Italian Spiderman
Definitely making that soup
Thank you. Good food that's easy to prepare, no faff, no fuss, no useless faddy ingredients and easy on the budget. You leave me with the feeling that even I could make that. Once again, thank you.😊
I'm so glad I came across this video. All 3 dishes look delicious.
I once made spaghetti using a package of ramen, like 4 marinara dipping packs from Sonic and a slice of american cheese
That sounds almost too horrible for me to imagine.
This made me wanna cry
Id do it. If all you got is ra.en do it to it man. Ive been there
The real struggle meal
Efren Ledezma ew

Just made the gnocchi meal tonight absolutely delicious! Thank you Frankie!

Haha love the energy!
we love you to frankie :D
You could have saved even more money cause the original Gnocchi only has flour and potatoes. No eggs, no cheeses, though the sauce can have that
I love this guy

chindvids ah, you have a point, man.
@@chindvids babish is best
U MISSPELLED BABISH
I'm Italian, honestly? Your pronunciation is fucking great, you are the only American person I ever heard pronounce gnocchi in the right way
I would love a video that just covers struggle tools 😂 but seriously like struggle tool montage with bonus struggle tool ideas would be amazing
I love you too & your Fam💜💜💜 Anywho, I really enjoyed making your recipes and telling you about them on Instagram. Most of them have come out really really good.

You are heaven-sent, my friend. Recently started out on my own, my salary's not too big. You came at just the right time.
I knew how to cook before, but Frankie made me great. he taught me everything I know
You are a joy! My gnocchi hero. Lol.
i discovered frankie from struggle meals on snapchat and boiiii do i love frankie's energy and vibes. he's so funny and energetic and just seems so nice and down to earth. it feels like he's the awesome chef friend i never had lollll. i wish more chefs were like frankie :")
0:27 Grazie grazie grazie! Hai spiegato perfettamente qualcosa che gli americani capiscono difficilmente.
much love from Bologna 😘
perche la maggior parte degli americani pensano che cibo 'italo-americano' sia 'italiano' invece sono molte diverse. italian american is more laborious to make and consists of more ingredients, the exact opposite of great 'true' italian food. some generalization here, but it's complicated as you know. Amo Bologna
Frankie, you are my hero. Even from your first pizza where you were in a band ;)
That shirt! I gotta get one!
Love the recipes
As cost saving as they are, here in Switzerland where I live it would still add up to the equivalent of like 8$ min
Love Frankie, he's funny and so smart! I've saved $ on mushroom with his tip. Never had falafel that worked until him. He's smart, funny and really good at what he does. :)
How is Frankie not on TV? He is hilarious, informative, entertaining and handsome. He deserves a raise.
My Nonna approves
I love this one. I'm very excited to make gnocchi at home thank you
We love you too, Frankie!
My fav country, fav soccer team and fav chef 👨🍳❤️❤️
yass Frankie we love you back!
Frankie's italian is pretty good
And this is said by an italian
He learnt under the threat of Nonna's wooden spoon lol
grazie, sto provando
+Frankie Cooks you're welcome, and keep improving!
@@Janine.Najarian lol Simpsons
I love this show,,,,i love you frankie,,,,
That looks good and I will cook it and good video ^-^
Wow that was the easiest way to make Gnocchi... I always had to buy them and it’s hard to find fresh and good ones. Thanksss
Do episode on Dutch food. Like Stampot Boerenkool (mashed potatoes mixed with kale). But you can make basically everything into a Stampot, so try it out!
You can make gnocchi’s with only potato and flour, you don’t need all the other ingredients
what a fun video
For the soup, u could use an immersion blender or just mash the soup with a potato masher. Potato mashers = $2
While I get the multi purpose of the potato peeler, you have a zester on the box grater. Use that instead of the peeler for zesting lemons, much easier to avoid the bitter white.
Well done!
thanks for the vid i made this and it was really good
I want that soup ♥️♥️
I prefer lentils over white beans, but otherwise I make that soup all winter long.
Natalie A substituteee
That Italian flag/American flag shirt is everything!
yass. italian cuisine is delicious, time and money saving.
im back in the italian house- and would kiss every italian grandma that serves me a dish full of pasta. molto grazie nonna!!!!!! ♾💜
I like to binge watch Frankie.
Omg first time i see you..,,i loooove you!
This is my favorite :)
put the phone on do not disturb, frankie i love you!
If you don’t have a box grater, I once “riced” my potatoes for gnocchi by pushing it through a (clean) fine strainer! It took forever but it worked!
Please write a cookbook!!!!
Man you're good.
Can I have some of whatever Frankie's on 😂😂😂😂
caffine
That was amazing.. ❤ from India
He must live in a college area full of adderall lol
Who needs blue apron
exactly
Eww expensive 😂
