    Grape Jam Recipe:
    FOR EVERY 2 (8 OZ) HALF PINTS, YOU WILL NEED:
    1 1/3 cups
    Concord Grapes - Prepared per below
    1 1/2 Tbsp
    ® Ball RealFruit™ Classic Pectin amzn.to/3ZWYl14
    Granulated sugar
    1 2/3 cups
    TRADITIONAL
    1 cup
    REDUCED SUGAR
    To Prepare Grapes
    1. Remove stems. Pinch grapes with fingers to separate skins and pulp. Finely chop skins; (or simmer with skins on) set aside. (As you know you can skip this step with a potato ricer or food mill)
    2. Add 1 cup water to pulp and (skins on) simmer 5 minutes, covered.
    3. Sieve to remove seeds.
    4. Add finely chopped skins to pulp, if desired.
    Make Your Jam
    1. PREPARE waterbath canner, jars and lids according to manufacturer's instructions, if preserving.* Prepare and measure ingredients for recipe. ®
    2. COMBINE prepared fruit and lemon juice (if required) in an 8-quart saucepan. Gradually stir in Ball RealFruit™ Pectin. Add butter, if using. Bring mixture to a full rolling boil that cannot be stirred down, over high heat, stirring constantly.
    3. ADD entire measure of sugar, stirring to dissolve. Return mixture to a full rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. Skim foam if necessary.
    4. PACK based on Enjoy Now or Fresh Preserve steps below.
    *If you are preserving at an altitude higher than 1,000 feet above sea level, adjust processing time as indicated by the altitude chart (www.freshpreserving.com/adjus....
    QUICK TIP: Adding up to 1/4 tsp butter or margarine will reduce foaming

    had a coworker complain the grapes he was buying went bad too fast
    and could do nothing. i knew where he was coming from.
    this has been years past.
    here recently i was reliving this problem.
    so I tried this, and it seems to work fine.
    i wash the grapes in cold fresh water,
    remove the stem and cut them in half.
    grapes keep fine

    Just a thought. Using a blender will chop the seeds. This may make your juice more bitter.
    You can pulverise the grapes with the end of a wooden rolling pin, then use a potato masher when squashier.

    Hello, I have a question! Doesn't the immersion blender break up some of the seeds? It seems that these seed shards (and seedy taste?) would then be able to pass easily through the mill or ricer and I assume that this changes the character of the jam? It doesn't look like your jam contains seed fragments, and I have to conclude that you definitely still enjoy the flavor of the jam after the seeds have been immersion-blended! I'm curious to know your thoughts on this, bc it's clear that my 'fears' about the seeds are probably invalid, but I'm super interested to hear perhaps why! =) I have a bunch of concords right now after a long afternoon of harvesting from very high up with pole loppers etc, and I'm eager to preserve them somehow. I will continue to research here on youtube, and get that done today. But your video made me curious! Thank you for sharing this video =)

      The immersion blender doesn't seem to break up the seeds too much. I mostly use it to break up the skins. (Which are softer) you can skip this entirely if you have concerns, and use a potato ricer or food mill to extract the seeds.

    wow, isnt there a way to preserve the skins? Thats where all the antioxidants are!

      Hey thanks for commenting, I love it when we can keep the conversation going!
      To answer your question, much of the skins do end up going through the sive and into the finished product. However, you can slip the skins and save them to process later. You could dehydrate and powder them. Then add them to your jams or any other grape product you make.
      This is a great idea that we might have to do a video about.
