    I do this at home, too. I use 1:1 yellow and black mustard, a bit olive oil, a bit dark sugar, apple cider vinegar, salt, water. No commercial mustard can beat it.

    Just made my first batch with yellow powder and black seeds. Used cold water and wine vinegar. Should be good if it doesn’t burn my nose too much. All our decent mustards here in Thailand are imported and taxed so this is a big cost savings.

    I've only made the fermented mustard from nourishing traditions. It's a 3 day ferment and so powerful! Some history as well: During the era of king's, mustard always sat at the ready next to the king in case he was poisoned! He would take a spoonful and it would cause him to vomit. The mustard I make from the above mentioned will cause you an upset stomach if you take too much. Our family loves mustard but when we over did this homemade mustard we learned just how true it was, a little goes a long way.

    What a great tip about the temperature of the water. I have made mustard spreads before and had no idea why they were always spicier. Refrigerated water was why. Thanks for a great video!

    I love the video. Great explanations and I’m going to give this a try. I will say this, I don’t know if there’s any person in the United States, or the world that has to make a financial decision based on mustard. I see this more of a artisan journey than a cost savings project.

    I recently learned how to make cranberry mustard from the BALL BOOK and OMG is it delicious. I also made a hearty German mustard. So much easier than I imagined.

    I made this mustard using yellow mustard seed & very cold water. Boy was it spicy hot. I toned it down by adding juice & a few pickles from my 14 days pickles. It’s still a little spicy but it’s delicious. Thanks for a keeper recipe.

    I've been making my own mayo and ketchup for years. At age 61, I never thought about making mustard until today when I realized I was out, but had a big can of ground mustard. As luck would have, I also have a jar of mustard seeds. Yay - I'll be making some today! Thanks for the tutorial and links :)

    just made this using your video and website yesterday. I used ice water (41F). turned out great! I think next time I will back the salt down a little but I'm one of those people who are a bit sensitive to salt taste ...this is a great starting reference, thanks a ton!

    I've made mustard before but I ran across black mustard seeds.
    I doubled your recipe and substituted the water for ice cold dry vermouth.
    Loving it already even before it sits in the refrigerator.

    Thanks, Carolyn, for this video. I didn't see anything in the comments re how much commercial powder to use. A video on the Suttons Daze channel uses your Tbsp6 seeds and C1/2 commercial powder, so I went with it. My mustard is a bunch spicier than I expected, but I can see where and how homemade beats storebought. I threw in Tbsp2 white sugar and Tbsp1 honey in hopes of cooling the kick some. Can't wait to try this with my next turkey sandwich.
    If nothing else, this mustard is gonna kick my oncoming sinus infection where it counts!!! Yay!!!

    I literally went on your site yesterday to print your mayo recipe and then since the mustard one came up too, I printed and read through that too. How timely that your video for it came out same day! I think it’s a sign 🙌🏼😁 homemade condiments on the way! (I did make the mayo with olive oil, but must say I think it’ll invest in the grape seed since I’m not loving that olive flavour so much).

    The fact that it is so simple is kind of mind blowing. Now I just need to find a good reliable way to get mustard seeds. Guess I'm gonna have to look up if and how I can grow mustard if I can. I know we had wild mustard, but that's invasive and can leave you with burns, so idk how good that would be to use. I'm sure there's a different kind that is used for edible mustard.

    I didn't realise that temperature makes a difference to the hotness. Thanks for that info. I've also read somewhere that grinding dry makes it hotter than grinding wet, i.e. soak the whole seeds in the liquid first. The liquid prevents chemical reaction that happens in air to create that heat. Can't remember other details. I also vaguely remember that fermenting is another method, unless this is a form of fermentation?

    Does it matter what type of water? I know tap water quality can vary and be dangerous at times (boil water notices), bottled purified, spring or distilled water? Are we looking for a certain ph? I'm looking for a mild, traditional yellow mustard. If I use warm water, will placing it in the fridge defeat the effects and make it spicy? Do I need to leave it out for a while before putting it in the Fridge for that 24 time period?
    Also, how do you know when it's gone bad?

    I made this recipe the first time with cold water because I was going for spicy hot, but the second time I used warm water and it still came out spicy hot. Both times I put them in the refrigerator for two full days before tasting. I am using both whole yellow mustard seeds and totally grounded yellow mustard seeds. Any help would definitely be appreciated.

    Will this mustard taste at all like (French’s) yellow plain ol’ mustard?
    While I like dijon and brown mustards we rly love basic yellow mustard and finding a recipe is impossible.
    I didn’t know to buy white seeds (and add turmeric for the color)-is that rly the key to making basic mustard?

    I have a question. How long past expiration date on can food is it eatable? Stored in dark cool cupboard. Will heat effect the canned food as well?
