I owe a lot to this documentary for showing me just how crucial Black culture and cuisine has been to food in the U.S. Especially learning about Hercules Posey and James Hemings. I can't wait to discover more in Season 2!

Great series that beautifully presents vital cultural information. There is an underlying story that gets touched on in this season, but not fully fleshed out, regarding the tangible and persistent separation between those who migrated from the American south and the blood relatives that did not leave. The food became a source of shame for those who left the south and didn’t want to be associated with “the slave diet” as the Muslim brother quoted in relation to their creation of bean pies. It’s a real issue in our heritage that needs a whole series of its own.

dried cotton in floral arrangements and country white bread with a hint of cornflour or rye might be seen at juneteeth or emancipation day celebrations. Clairvoyantly, im seeing rich brioche and 🧈fluffy milk breads, savory pull apart fun breads (bubble bread), cheesy macaroni pie, pork bbq. new food will be fall off the bone goat curries(look into it lol...distancing from ___), 1 layer frosted cakes, fusion with other americanized comfort foods-worldclass and not pretentious. Psychically look into the rest of our lifetime as well as future wack-priority generations to figure out whats best or whats needed now. update slave food, "we ain't eatin remnants no mo'"

I don't know where else to point this out, but in EP1, the host asked how French culinary technique plays a part in Creole gumbo, and the chef simply said that the French "enslavers" got the credit for this cuisine when it should be Senegalese cuisine and the surrounding region in Africa that birthed it
I watched season 1 and I'm here for the untold African American story, but that exchange seemed dishonest to me, clearly gumbo is not based on bouillabaisse and it's obviously influenced by African cooking what with okra being called "gombo" and all, but when asked about the role of French cooking in gumbo, why were they simply dismissed as slavers? That aside, isn't it sus that gumbo is based on "roux" and a "trinity" that is essentially two-thirds mirepoix, yet that wasn't addressed when the question clearly called for it? Sorry, not trying to defend colonizers, but that bit seemed to lose integrity to me as a food enthusiast

  • @Storyraymond

Hi. I have "two" questions/topics that I have been wondering about. Did the slaves manage to bring any plants, seeds or anything with them physically? Does anybody know? I am just wondering if they used what produce that was brought over as proviant or goods for trading? And in the series, is the the claim that creole food has nothing at all to do with french cooking techniques, or that African cooking style/recipes/techniques was practically strongly downplayed through the local history in the US? I have learned that in the Philippines there is a lot of vegetables and fruits were originally imported from Mexico and Middle America's. I would not be surprised if at least one plant, fruit or vegetable could have made it there from Africa through the Americas all the way to the Philippines.

When the Transatlantic Slave Trade started, captured Africans braided seeds and grains into their hair to bring their foods with them as a way of survival. Rice, okra, peanuts, benne, watermelon are some examples of seeds and grains that were hidden and brought from their native homeland.

@@DM-zs8go So, you believe they always cooked this way…because they were all poor? Some of these dishes stemmed from colonial America, when Blacks were enslaved. Poor whites would not have had a reason (no matter how poor they were) to eat some these foods as they would have had access to the better cuts of meats and foods. Also, the cooking techniques and seasonings were not all the same because “we were all poor.” There were cultural differences that would have impacted this as well. What you’ll find over time, is that Southern food becomes synonymous with Soul Food, though all Southern Food isn’t Soul Food…or just poor people’s food. Yes, you may eat some of these same foods/dishes now…but it doesn’t mean that poor whites ALWAYS prepared them in the same manner. If you study food ways, specifically Southern cuisine, you would know this.
