If I just get the standard pack without the GPIO boards, what pros and cons will there be? Which feature will I not be able to use

You get all the standard features! If you have specific projects or needs you would want the GPIO - but also recommend an arduino starter kit that comes with breadboard etc. Would want to test setups prior to using the GPIO boards
