- This Persian Omelet was made popular by the Cafés in Iran. It's tasty, affordable, and quick to make, which is why I lived off of this delicious egg dish as a student. Try it for yourself and enjoy it with your favourite bread.
Ingredients serving two:
5 large free-range eggs
5 tbsp Tomato paste
3.5 tbsp butter
2 tsp sesame seeds
1 tsp dried basil

The sesame seeds are am intriguing element. I'm going to try that. I also like the idea of cooking the yolks for less time than the whites. Any special reason not to beat the whites before adding to the pan so they're less stringy?
