How to make Vietnamese Peanut Sauce for Spring Rolls - Goi Cuon Bo Bia Hoisin Dipping Sauce Recipe

  • I’m in the kitchen today to make a Vietnamese Peanut Dipping Sauce. This is kind of part two of another video I made for the spring rolls this sauce goes with.
    RECIPE:
    1/4 cup peanut butter (smooth or crunchy)
    1/4 cup hoisin sauce
    1 teaspoon sugar
    1/4+ plain water
    To follow along, you’ll need any kind of peanut butter smooth or crunchy and hoisin sauce. Also we’ll need a tiny bit of sugar. This recipe is super simple and I make it while I’m boiling rice noodles for my spring rolls. I’m going to squeeze out about a quarter cup of hoisin sauce to begin with. It doesn’t have to be exact, just get it close. Everything will go into the sauce pan.
    Next we need about a quarter cup of peanut butter. And now I’ll put in a half teaspoon of sugar. You can add more if you want it sweeter. Now I’ll put the pan on low heat and mix the ingredients together. The heat helps the peanut butter soften up so everything blends together easily. You can turn off the heat now. This mixture gets pretty thick but I’m going to start out with a quarter cup of plain water and slowly add it to the mixture. Keep stirring until the water is thoroughly mixed in. If you want the sauce a little thinner, you can add more than a quarter cup. That’s what I usually do. But only add a little at a time so you don’t get it too runny.
    The recipe in this video is enough for about 6 or 7 spring rolls depending on how much you like to dip and I like to dip on every bite! Even though there are only 4 ingredients, this recipe tastes just like what I get at the restaurants.

    Thanks! I was looking for a fast and simple peanut sauce and this looks just like the stuff at my local Vietnamese place. Best thing is that I already have all the ingredients here. :)
    I know you say you can use either smooth or crunchy style peanut butter, but I think I'll go for the smooth and just add some chopped peanuts on top (all about the looks).

      Using smooth peanut butter is a great choice. I mention smooth or crunchy just because I use what I have on hand. But I do agree that sprinkling crushed peanuts on top adds a nice touch to the presentation like at the restaurants. I just didn't have any peanuts when I shot the video.     Add a little oil to the pan and a teaspoon of garlic, fry it on a low heat for a couple minutes and then add your ingredients, then thin it with milk at the end, it will be super creamy

      I agree! Peanuts help finish the sauce. Sometimes I use crunchy peanut butter so the peanuts are already in. Since I make this for myself a lot of the time I don't garnish with peanuts but if I was making for others I'd definitely sprinkle some peanuts on top for visual appeal. Thanks for watching!

      It is very common to use steel utensils and spoons in Asia. I prefer them as well because wood absorbs whatever you use it in and discolours and stinks despite thorough rinsing

      Thanks for your question! I don’t think you can substitute oyster sauce for hoisin. They taste different. Also oyster sauce is really salty and not the flavor you want in the peanut sauce. Hoisin sauce is often referred to as an Asian bbq sauce. It’s not exactly bbq sauce but maybe you find some kind of substitute.     I subscribe to your channel because you are brilliant and I made this and I just kind of eyeball the ingredients and you don’t even need sugar added unless you’re going with a real organic that doesn’t have any kind of sugar because most of the peanut butters do have a little sugar added the almond butter that’s organic gluten-free from Costco works great!

I prepped all the ingredients in advance, one thing though I used a very large rice paper, and it seems that is got too thick in some places especially the corners. Do you have any tips to avoid thick chewy areas. Also how do you go about wetting your rice paper rolls so they are not sticking together.       I totally understand that it can be difficult to master the use of the rice paper! I’ve torn quite a few myself in the beginning. But once you learn the proper technique it’ll come out perfect every time. The rice paper only needs to be dipped in water about 5-6 seconds. Then wait about 1.5 to 2 minutes to wrap it.     Hi can I use oyster sauce instead of hoisin sauce?

      You can’t substitute oyster sauce for hoisin sauce. They have different flavors. Hoisin is slightly sweet. Oyster sauce is very salty. Maybe if you try oyster sauce add only a little at a time but you’ll need more sugar to balance out the flavors. That’s the best advice I can tell you at this time. Thanks for watching!

      Yes you can make the sauce without cooking it! I put it in the pan with heat just because it makes mixing the peanut butter easier but you can definitely do it cold in a bowl! Hope this helps!

    Please invest in a narrow plastic spatula and whisk. The spatula will clean our your 1/4 measuring cup cleanly and the whisk will be appreciated and possibly get you more thumbs up. (Like nails on a chalkboard, dude!)

      Haha! I didn't even think about the spoon scraping the pot when I was making this video. Several viewers have commented on that! It's these kind of suggestions that help me refine my future videos. I make this quite a bit at home and I just use the spoon to stir because I don't want to dirty up another utensil. I don't even think about the sound when I'm doing it but I can see on video how it can be annoying! Thanks for watching!

    Is hoisin similar with oyster sauce?

      Hoisin is not the same/similar to oyster sauce. Hoisin is slightly sweet. Oyster sauce is actually really salty. So the flavors will not be right if you use oyster sauce. Hope this helps!

      Thanks for your question! In the video, I used Trader Joe's Organic Peanut Butter. I just went to my fridge and looked at the ingredients. That peanut butter is unsweetened. It only contains peanuts and salt. However, I would use any peanut butter I have around but that's the one I buy. This peanut sauce tastes really good and is super easy to make!

      I’m not an expert on Vietnamese peanut sauce but I don’t boil mine. I only use heat to help soften the peanut butter so it’s easier to mix. To me boiling isn’t necessary and my recipe has minimal ingredients.

      Yes you can use honey instead of sugar! Actually I’ve made this without sugar and it still tastes good! I think the amount of sugar I add is so minimal that it won’t make a difference. Hope this helps!

      I don’t think there’s any substitute for hoisin. If hoisin sauce wasn’t in the recipe it wouldn’t taste quite right. Sorry I have another option for you.

      It's surprisingly hard to find Hoisin sauce here in Nothern Vietnam even this is a recipe for a vietnamese sauce

      I’m afraid not! The hoisin sauce has a specific flavor that is slightly sweet and savory which is different than soy sauce. This combination of peanut butter and hoisin sauce is the typical flavor of Vietnamese peanut sauce. However I’m thinking you might me able to make a Thai peanut sauce that does not use hoisin sauce as an ingredient. Hope this helps!

      Oh yes! Very sorry about that! I’ve been reminded many times about the scraping spoon! Funny thing is that I never think about it when I make it but in this video the audio is too profound! Not sure why I didn’t turn down the audio level of the spoon but I assure you the sauce is tasty!

      Yes! Sorry about the spoon! So many viewers have let me know about it. I should’ve decreased the level of sound during that part of the video. In real life it doesn’t sound bad but the mic really emphasized the metal on metal stirring. The recipe however is very delicious. I just made some more yesterday for my spring rolls. Hope you try it!

      Yeah! Lots of people commented on the sound of the spoon! I didn't even think about the sound when I was making the sauce. It sounds worse on video so in the future I'll remember to use rubber spatulas if there's any stirring in metal pots!

      Hoisin sauce is a thick slightly sweet sauce made from soybeans. Depending on where you live you can find it in the Asian aisle of most major grocery stores. Sometimes people refer to hoisin sauce as Chinese BBQ sauce but I don't think that's accurate.

      Yeah sorry about the metal spoon! I use it all the time to mix the peanut sauce but when recorded on video it’s not a pleasant sound to listen to! Many viewers have let me know their thoughts about the noise! I should’ve lowered the sound on that portion of the video but in the future I’ll be using a wooden spoon. Comments like this help me make minor adjustments to my productions for a better viewing experience! However the peanut sauce does taste really good with the spring rolls! I hope you try it!       Haha! I have a whisk but for some reason I keep using my spoon. I think it's because I just use the spoon that already has peanut butter on it so I don't have to wash another utensil!

      Haha! Yes! So many people are annoyed at the stirring sound in my video. It’s actually not that bad in real life but the mic on the camera really amplified it.
