I am an Indian Dairy technologist & have visited hundreds of dairy plants in India & middle East.Believe me, though your factory is small , worker hygiene & cleanliness are impressive.Unlike the European small dairy plants which manufacture cheese your factory workers use gloves & masks.I believe you are giving them training in clean food manufacturing & are vaccinated. Try to reduce human intervention by further mechanization & automation.

I do this at home, with cow milk and renet (hard for me to find goat or sheep milk) to get the perfect texture and richness... but the Halloum needs to be boiled and flavored with Ma7lab and Meskeh... and then spearmint leaves added in the fold. Otherwise, it's not Halloum...
The mskeh and mahlab are added to the mix that the nabulsi cheese will be boiled and brined in. I personally don't know of any manufacturer that adds those to halloum
