Nice conversation - both parts (it's one conversation split into two recordings/sessions, I presume). By the.way, we usually totally overestimate how much protein we actually need. I would argue that plant-based nutrients are the best quality in terms of both their bio-availability and efficiency at which they're metabolised - as long as they're unprocessed (cooking destroys many nutrients; protein structures degenerate, minerals turn into their inorganic form which we can't metabolise, water-soluble vitamins are lost, etc...)
