Wow, these look very good. I'd like to try them with coconut sugar first and then make a vegan version with Naturia butter and flaxseed eggs. Btw, an easier way to mix butter and sugar would be to mix butter that has softened at room temperature without actually melting it. That way you don't need to wait till it thickens and you don't need to melt, which means less steps-easy peasy!
