    Good quality moonshine is crazy stuff. I once had a sip of some 120 proof that was Apple Pie flavored. Tasted like I was drinking a pie, ZERO alcohol taste and smooth as silk

    I'm curious if when they upscaled the herb mix they measured by volume rather than weight. I mean could be any number of things: if any of the herbs dried out before being measured, humidity at the time of measuring, etc. Upscaling really highlights any tiny errors that go unnoticed between smaller batches.

      Anyway I used to drink Moonshine because it get me drunk so fast and hard. But not enough that I don't get drunk and past out. It's a creeper yet you can control the amount.

    I live in Switzerland, just two hours away from the Val-de-Travers where the original Absinthe is distilled ( clandestinely until its legalization in the early 2000s). Is an old tradition that requires years of mastering, that has nothing to do with sugar cubes, or greenish cheap drinks, and seeing these two men from across the ocean respecting this drink is a wonder!

      @@Nesto38 It was banned because they thought there was one toxin contained in the drink that was driving people mad. In 2005 some scientists deemed the experiments they did back then invalid, since they basically injected animals with thrice the quantity of the toxic actually contained in Absinth. What the real problem was, in fact, just alcoholism. Is a really good drink, and is probably the cleanest alcohol high you can get. If you travel there you can even find secret Absinth fountains in the local forest, where you can taste Absinth for free directly with the fresh source water.

      Absinthe became really widely popular after a disease wrecked grapes harvests and ko'd the wine industry in parts of Europe and it captured a large part of the wine buying market. When the wine industry bounced back it experienced difficulty in recapturing a large chunk of the now absinthe loving market, until a guy binged out on various alcohol drinks then had a drink or two of absinthe after which he went on an axe murder rampage, which was blamed solely on absinthe. Coupled with a flurry of bad press, some difficulty in taxing absinthe, its adoption and adoration by fringe elements such as the "bohemian" crowd who were the "hippie generation" or "counter culture" movement of the period, and some unscrupulous makers who put out tainted product resulted in many countries banning it.

We see this over and over in history. All sorts of herbs and things have been demonized and painted with a broad brush as being bad, while coal tar poison is sold by the trainload.     Seeing traditional absinthe produced in a bayou is one of the coolest things I've ever seen. The Henriod Sisters and Major Dubier would be proud, true dedication to the magnificent craft of distilling true absant is on display here and they deserve grand success. Wish the Absinthe Salon was still open in Sydney so I could serve this drop, what an amazing story behind it!

    Man, I remember when I was in the army I bought this wicked expensive bottle of french imported absinthe, and me and my buddies drank it all in doing raw shots straight from the bottle; no sugar cube, cold water, no fancy glass, nothing... And this was mine and my buddies first time drinking absinthe (it was the real deal too), now seeing this and how these guys properly taste and drink it just makes me realize how I wasted such an expensive and _rare_ product with me and my fellow grunts treating this fine french mademoiselle green fairy spirit like a cheap Jose Cuervo hooker from TJ w/no salt or lime 😂

    It thrills me to no end seeing moonshining is still alive and being passed on to younger generations. It’s history is part of my culture and I’m always happy to see others making homemade high test liquors that are being made by people who care and aren’t passing on poison.

    I once made pastise, which is a similar drink. I redistilled the first run with only anise to get the "milking" effect and then I added the other herbs. It turned out real good and it was easy to "control" the flavour.

    you can definitely tell when they're talking out loud for the cameras, and when they're actually communicating with each other, i bet their normal sessions contain almost no verbal communication. I'd love to see their own version of this without the TV show edits and whatnot

    having spent time with lots of old timers, I appreciate the dialogue between these youngins describing the hues and what might be contributing to the issue. You get a sense real quick they know 'country style' what they're talking about and could easily match wits with any other producer.

      Well Anabelle, that's because Australia never had a Country wide Alcohol Prohibition in the early 1900's. The US outlawed the consumption of it from 1919 to 1933, oddly 4 years before they went after marijuana. Moonshine was popularized during prohibition, but never completely faded from our culture after prohibition ended.

      @@trolleyracingmaster7075 that’s because the episodes are recorded way in advance. Law enforcement can only arrest you while in the act. Once an episode is aired they can’t do anything because they need evidence. They can’t prove what they’re viewing is actual alcohol being made unless they’re catching them in the act.

    My great grandfather and his sons (including my grandather) were moonshiners/bootleggers in Louisiana during Prohibition.
    I always heard stories about my great grandfather buying a Buick in the 1930s but didn't know how to drive. I never knew how a black sugar cane farmer in rural Louisiana was able to buy a car during the Great Depression. Well, my dad accidentally let it slip a few years ago. It was funny because all my older relatives told the story about how Big Daddy (yes, they really did call him Big Daddy) bought a car, couldn't drive, and ran it into a ditch. They never said how he got that car.
    I still don't know how he got away with it and all of my dad's cousins are gone, so I'll never know. It's a great family story.

      My grandmother ran truck loads of it, was caught by crooked cops multiple times. Dead men dont lie.
      Built houses with trap doors into a liquor basement/bar.
      I grew up running into people who only knew her by her alias.
      180mph police chases etc
      She was a good woman, who would give a stranger the shirt off of her back and the last meal she had. Literally did so, many many times.

    As a chef I recognise those immediate issues when scaling, and without a truckload of experience there's just no way to get it right the first time, it's all trial and error.
    Different ingredients just don't scale the same way, ESPECIALLY when it comes to aromatics, you need to scale up linearly not exponentially, that means going form 1 litre, to 2, to 4 to 6, making adjustments as you go and taking note of any patterns that emerge and applying that knowledge.
    You end up wasting way less resources this way.
