  • Hi Everyone! Hope you enjoy my new video!! When I say this is one of the most VALUABLE videos you could watch, I honestly mean it! Don’t sleep on AI, because it can honestly make life SO MUCH EASIER! So here are 5 prompts you can use to help you get cooking healthy meals and live a healthier lifestyle!
Recipe details from the video below:
    Creamy Spinach and Pesto Chicken
P.S. I‘ve added the changes I would make and also added some extra rice as ChatGPT recipe used hardly any! I‘ve adjusted the macros accordingly 🥰
    INGREDIENTS (Serves 2):
1 chicken breast (about 150g per person)
    1/2 tbsp olive oil
    Salt and pepper, to taste
    2 tsp dry basil
1/2 bag of spinach (around 100g)
45g green pesto (22.5g per person)
100ml single fresh cream (50ml per person)
1 cup of cherry tomatoes, halved (shared between two servings)
120g uncooked rice (60g uncooked rice each)
    METHOD:
    1. Cook the rice as per packet instructions, whilst you prepare the rest of the dish. Once the rice is cooked, drain any excess water and leave in the pan (off of the heat) with a lid on until ready to serve.
2.Season the chicken breast with salt, pepper and basil then heat olive oil in a large pan over medium-high heat. Add the chicken breast and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the pan and set aside.
    3. In the same pan, add a bit more olive oil if needed and sauté the spinach until wilted. Reduce the heat to medium and add the pesto to the pan, stirring to combine with the spinach. Pour in the single fresh cream and stir well. Let it simmer for a few minutes until the sauce thickens slightly.
    4. Slice the cooked chicken breast and return it to the pan, coating it with the creamy spinach and pesto sauce and then add the halved cherry tomatoes and let everything cook together for another 2-3 minutes, until the tomatoes are slightly softened. Add the rice to the pan with the pesto chicken, mix together and serve between 2

    No Protein Chocolate Brownies
    INGREDIENTS (Makes 12):
140g Flora Light (or any light butter substitute)
    50g dark chocolate
    140g caster sugar
    150g low fat Greek yogurt
30g cocoa powder (increase from original 20g)
80g plain flour (increase from original 40g)
    1 tsp baking powder
20g white chocolate (chips or chopped into chunks)
20g milk or dark chocolate chips
    METHOD:
    1. Pre-heat the oven to 170°C fan.
    2. Melt the butter and dark chocolate together either in the microwave or in a bowl over boiling water and then mix them together and set aside to cool slightly.
    3. Combine wet ingredients by whisking yogurt and sugar together until well combined.
    4. Then mix dry ingredients by sifting in the flour, cocoa powder, and baking powder into the yogurt mixture. Mix everything together until well combined.
    5. Add the chocolate and butter mixture to the batter and mix everything together until a thick, smooth batter is created. Fold in the white chocolate chunks and milk or dark chocolate then pour the batter into a small, lined baking tin.
    6. Bake in the oven for 20-25 minutes. The top should be quite crispy but underneath still a little soft. Remove from the oven and allow to cool in the tin for 10 minutes before removing.
    7. Allow to cool completely before cutting into 12 pieces. Store the brownies in the fridge for a better texture.
