  • Pesto chicken panini sandwiches are delicious, hearty and gourmet style! They are very quick and easy to put together at home, and you can make them at a fraction of the cost of the ones you get at famous cafes, bakeries and restaurants. Below is the full written recipe for your convenience.
    Pesto Chicken Panini Sandwich:
    2 lb thin cut chicken breast filets
    1 heaped tbsp mayo
    2 heaped tbsp pesto
    1 tsp salt or to taste
    1 tsp garlic powder
    1 tsp black pepper
    2 tsp red chili flakes
    Mix everything really well to marinate the chicken. Set aside for at least half an hour, or up to overnight. When ready to cook, heat 2 tbsp oil in a wide pan over medium high heat, and in a single layer, place the chicken steaks. Cover and cook 3 to 5 minutes per side.
    Note: this quantity of thin cut chicken filets can make up to 8 sandwiches.
    Other ingredients for sandwiches:
    Fresh basil leaves
    Thinly sliced onion
    Sliced tomatoes
    Pesto sauce as needed
    Havarti cheese slices (or substitute with mozzarella or provolone)
    Ciabatta bread (or substitute with hoagie rolls, Italian bread, baguette or any crusty bread)
    Generously slather pesto on each side of the ciabatta roll. Top with basil leaves, onion, tomato, chicken steak, and cheese. Place in a hot panini grill, and press down till the bread is toasted, and cheese is melted.
    Serve hot and enjoy!
