Actually, the Lion is optional. Only 3 bosses are required, I thought it was 4 but I just learned another skip today. But I would advice you to get all the Scadutree fragments, which means go everywhere and then some. They are what matters in the DLC. If you play with summons you might wanna get all the Revered Spirit Ashes too, so that your +10 summons stop being useless. They added another leveling system for both you and your Mimic, basically. And you might wanna explore every area in the base game too lol, venturing into the DLC before killing Fire Giant is ballsy. That means you never went to Farum Azula, and likely don't have a fully upgraded weapon (I just saw that it's only +18). And if you went straight to Mohg, you missed most of Snowfield and all of Haligtree and Elphael. Many items that might be useful in these places, not to mention the runes.
Even if you're satisfied with your stats, it doesn't hurt to get them closer to 99. Getting up Faith and Arcane can be very useful too, even if it's just for Golden Vow and higher bleed procs (depending on if your weapon scales with arcane or not). And there are at least 2 mandatory bosses where Lord's Divine Fortification might come in handy, which requires 27 Faith and a Sacred Seal to cast. Point being, you missed a lot in the base game that might help you. The Lion is definitely the easiest remembrance boss in the DLC, for reference.
Edit: Ohh, you just showed your level. Yeah, 119 is very low for the DLC. The devs recommend level 150. 60 Vigor was perfect for me but I had a Brass Shield. Without a shield, you're probably gonna die a lot, just like everybody else who refuse shields. Just don't overdo it, Greatshields turn the game into a joke. I also just noticed that your flasks are +7. You can get a total of 14 flasks and get them to +12. That would be my first priority before walling for no reason.
You don't have to fight that knight who bullied you, get him for lols after you beat the DLC. Running past annoying enemies like him, the giants or the shielded douchebags is standard practice, fighting everything is rarely fun. Save the deaths for bosses, the enemies that truly matter. By all means, attempt to fight your way through once but when you know where to go, there is hardly a point in killing trash mobs. Unless you know that they drop something useful. But it's not like you need every item from every enemy to beat the game. At least not with a shield lol.
And you can turn the Physick into a 15th heal too. Yes, I like healing, sue me. Having a healing Physick actually got me countless of kills where I barely made it.

Level 119 for the DLC is at least 41 Levels under the recommended Entry Level for the DLC but so far so good 🤘🤘🤘
