    This is the holy grail of recipes. I've always wanted to brew Ayela for along time and I finally did it. Turns out its not even that complicated. Here is exact recipe I used in the video. Follow exact instruction shown in the video and you will end up with perfectly brewed newari Ayela.
    Here are the exact measurement and other information:
    Day 1: Ferment rice
    2 X 8 cups Jasmine Rice= 16 cups
    1/2 Tsp of Dried Yeast for every cup of rice= 8 tsp
    Rinse rice once and cook it. Spread it on a tray and let it cool down completely. Add 1/2 Tsp of Dried yeast for every cup of rice. Mix it well. Pack it in a container. Cover it with a lid, wrap it with a warm blanket and keep in a warm dark place for 6-7 days.
    Day 6: Add fruits and other ingredients to the fermented rice
    2 cups beaten rice
    1 lb jaggery OR Molases OR Sugar
    10 lbs of fresh fruits
    I used 13 apples, 1 pear, 1 Asian pear and 4 persimmons.
    Except for the citrus fruits, you can add any sweet fruits. Use over ripe fruits, if you can find. Cut fruits into small pieces. Blanch the cut fruits, let it cool down completely.
    Chop jaggery into small pieces and mix it with beaten rice
    Take a large container, add the fermented rice, blanched fruits, beaten rice and jaggery. Mix thoroughly. Add 5 gallons of water. This mixture is called "Ka" in Newari and "Mash" in English. Cover it with a lid and keep it in cool dark place. Cover it with a light thin blanket.
    Day 13-14: Stir the Ka
    Unwrap the blanket, you should smell the sweet aroma sweet apples. You see a thick white layer. Stir it couple of time, cover it with the lids, wrap it with blanket.
    Day 20-21: Stir the Ka
    You should smell the sweet aroma sweet apples and the fermented smell. You see a thin white layer. Stir it couple of time, cover it with the lids, wrap it with blanket.
    Day 28: Distillation Day
    Unwrap the blanket, you should smell the sweet aroma fermented apples. You see a very thin white layer. Stir it couple of time, now its ready for distillation.
    I purchased a Moonshine kit online, it came with all the necessary tool and equipment.
    Follow the directly how to distill it. Let the condensation drip for 30-35 minutes and turn off the heat.
    Take a metal bowl, take a couple of spoon full of distilled alcohol from the 1st few ounces that is distilled. Lit the fire. You should see the beautiful blue flame.
    Use a hydro meter to measure the alcohol proof. Mine came out 95 Proof, which means it was 47.5% Alcohol. That's a damn good % of Alcohol for a first try.
