  • Here's a perfect large and inexpensive cut of meat that you can cook and it won't take all day to put a nice smoke flavor together on a medium-rare cook!
    Here's the recipe for the Rub/Paste I made for this roast but you can season this roast any way you prefer. You can use a simple salt and pepper or you can put your favorite barbecue rub on it. This is the rub paste that I prefer to use on my prime rib roasts:
    The recipe for the rub/paste I used on this roast is:
    1/4 cup coarse ground kosher salt
    4 cloves minced garlic,
    1 tbsp black pepper
    2 tsp paprika
    1 tsp dried rosemary
    1 tsp dried thyme
    Extra Virgin Olive Oil to form paste

    You can get them at Home Depot. 2 inch copper pipe fitting.
