    KEYLIME PIE CHEESECAKE
    Serves 8

    INGREDIENTS:
    4.5 oz (125g) of chocolate wafer cookies
    1 tsp (5 ml) sugar
    pinch of salt
    3 tbsp (45 ml) butter, melted
    16 oz (452 g) of whipped cream cheese
    1/3 cup (65 g) of sugar
    2 eggs
    1 ½ tsp (7.5 ml) vanilla
    2 tbsp (15g) flour
    1 14-oz (400 ml) can Sweetened Condensed Milk
    4 egg yolks
    ½ cup (120 ml) key lime juice (about 12-13 key limes + one more key lime for the garnish)
    2 cups (480 ml) heavy cream
    2 tbsp (13 g) powdered sugar
    1 tsp (5ml) vanilla extract
    METHOD:
    Preheat oven to 350F (176C). Spray a spring form pan with baking spray and distribute well with a pastry brush and set aside.
    Place the cookies, the sugar and salt in a food processor. Process until crumbs form. Add melted butter, continue to process until wet crumbs form. Transfer crumbs to the spring form pan and shake the pan to level the crumbs and then press them tin with a measuring cup or the bottom of a glass.
    Bake crust for 5-6 minutes until fragrant. Allow to cool.
    In the bowl of an electric mixer, combine cream cheese and sugar, beat on high until smooth. Add eggs, one at a time, beating in between each addition. Add vanilla extract and beat and then add flour and beat just until combined.
    Pour cheesecake filling into cooled cookie crust, smoothing out with a spatula until layer is leveled out. Set aside.
    In a large mixing bowl combine sweetened condensed milk, egg yolks and key lime juice. Whisk until smooth.
    Pour the key lime mixture on top of the cheesecake mixture, making sure you are covering all the cream cheese with the pie filling. Smooth out with a small spatula.
    Bake in a 350F(176C) oven for 35-40 minutes until cheesecake is set and jiggles slightly.
    Allow to cool completely.
    For whipped cream topping, combine heavy cream, powdered sugar and vanilla in the bowl of an electric mixer. Whip on high until stiff peaks form. Transfer to a pastry bag with a round tip. Pipe little dollops of whipped cream all of over cheesecake until covered.
    Garnish with fresh lime zest on top and a thinly sliced lime wheel in the center. Chill overnight to set.

    I made this about an hour ago, and the flavor (I pinched a small piece) tastes wonderful. My only regret is that since I didn't see the size of the springform pan to use, I used my 10" pan, therefore mine doesn't have enough height. The next time I make this delicious recipe, I will make it in my 9" pan.

    I made this for my husband's birthday during lockdown and he said it was the best cake he has ever had! I have since made it several more times and everyone loves it. Thank you so much for the recipe! I was wondering what other fruit topping might go with it besides key lime? Have you tried to make this with other flavors?

      I'm so glad it was such a hit!! I haven't done it with other flavors, but I bet it would work with any fruit you can juice. For example, if using raspberries, work them through a fine mesh sieve to catch the juice, and separate the seeds. You can see how I do that at the end of this video :) czcams.com/video/2UCDQX6AHqY/video.html BTW this is another awesome cake to try too! Then replace the lime juice with the raspberry juice and I'm sure it would be great too! Let me know if you try it because of course now I'm curious! :) LOL!

      @@EntertainingWithBeth I tried with fresh strawberry, but the egg yolk turned the strawberry puree to a most unpleasant brownish mauve color. :-| Can the egg yolk be replaced with something else? Gelatin? Agar powder?

    Oh what a beautiful cheesecake Beth, I didn’t know that flour takes over the need to use a water bath, that’s wonderful. Is that for all baked cheesecakes ?

      Yes I've found it works every time! You don't need a lot maybe 2 tbsp-1/3 of a cup depending upon how many eggs you use. This is another cheesecake recipe that uses that technique, also a yummy one! You'll notice more eggs and creme fraiche, requires a bit more flour.       Yes of course! The regular kind works too, just beat it a bit longer with the sugar to fluff it up and get some lightness to it :)

    I wonder if the whipped cream is going to keep it's shape overnight? In similar cakes usually a little gelatine is added to the cream to help it keep the shape for several days. I have guests coming for Ester dinner may i make the cake a day before?

      Yes of course! The whipped cream should be refrigerated the night before. If you see the slice in the video, that was a cake I made the day before so it's easier to slice since the whipped cream firms up :) You can totally do the whole thing the day before Easter, garnishes and all! I do it that way, and pop the whole thing in the fridge and then all I have to do is serve :) So easy that way!

      kucibaba I would make the cake the day before and decorate it with whipped cream a few hours before serving. Some heavy whipping cream deflated pretty quickly. It all depends on the brand so, to be safe just decorate before you serve it :)

      Oh sure it stays! That's why I always use powdered sugar in my whipped cream, due to the cornstarch that's in it, it stabilizes it :) Hope you enjoy!

    Hi Beth, I tried this recipe and it’s super delicious!!! One thing though. Just wondering why the lime part cracks everywhere and wrinkles everywhere. Is there a trick or something I missed that’s causing the cracks?

      Ah OK if you are getting cracks it means the lime curd is over-baking or your oven is running a bit too hot, or you need to put it on a lower rack (lower third of your oven, instead of middle rack) Hope that helps for next time but so glad to hear it tasted good! :)

    beth- if I make the cake the night before, would you recommend doing the whipped cream the day of? Or would the whipped cream be okay overnight?

      Great question! Definitely do the whipped cream the day before too! Otherwise it will be messy to slice if you do it the day of. In fact I do it all the day before, even the garnishes! And pop the whole thing in the fridge and then all I have to do is serve, and everything works out great :)

      Could you find key limes in Denmark or did you use normal limes? I'm not sure I could source key limes here in Norway.

      Angélica Ko-Pe i just used normal limes. Key limes haven't made its way to Scandinavia yet haha

    Beth, to make this quicker....Could I just add perhaps 4-6 oz. of softened cream cheese to the key lime pie batter instead of making 2 different batters? Would that thicken up the key lime pie batter?

      Hmmm great question! I'm not really sure what that would do since I haven't tried it but I think it may make the batter not the right consistency for the best texture. I promise it's worth the effort of the two batters! Ha! SO good :)

    For some reason none of the stores near me carry any kind of wafer chocolate cookies. Do you think chocolate graham crackers would be a good substitute?

    The condensed milk in our country is quite runny... can I Still use it? Should I try to reduce it down?

      We’ll just make sure it’s the sweetened condensed milk and not the condensed milk. I wouldn’t reduce it down I would use as is I think you should be ok because of all the eggs in there! Hope you enjoy!

      Well you might be able to do that if you added the lime curd on top of the cheesecake after it is baked, and then refrigerate it overnight to set. But since lime curd is already cooked on the stove top, I wouldn't cook it again with the cheesecake, that may have some unexpected results :) Hope that helps!

      Oh sure I use this brand. amzn.to/2ImJW9l They are cheaper if you can buy them in the store. Strangely they are usually in the Ice Cream Area near the Ice Cream Cones and such :) . Hope you enjoy!

      Thank you, I have never seen them and I am one of those that love the Oreos cookie part but not the filling, lol. And yes, I have made a pie and scraped all that filling away. . .this will make it so much easier and less waste.

      Ah, cracking ca also happen if the cheesecake was over baked or your oven might also run too hot. An oven thermometer can help with that. This video explains this concept more: czcams.com/video/FUs_sk-o_7M/video.html

    Hi Beth😊 I am planning to make this tomorrow I was wondering what size spring pan should I use I have the 7.2 inches and 8.5 inches. Which size would be better ?

      Great question! I used a 9” so I think your 8.5 would be perfect! You may need a few more minutes baking time for the smaller pan since it will be deeper amount of batter so maybe 5-10 mins more? Hope you enjoy!!
