KEYLIME PIE CHEESECAKE
Serves 8
Print Recipe here: bit.ly/KeyLimeC...
INGREDIENTS:
4.5 oz (125g) of chocolate wafer cookies
1 tsp (5 ml) sugar
pinch of salt
3 tbsp (45 ml) butter, melted
16 oz (452 g) of whipped cream cheese
1/3 cup (65 g) of sugar
2 eggs
1 ½ tsp (7.5 ml) vanilla
2 tbsp (15g) flour
1 14-oz (400 ml) can Sweetened Condensed Milk
4 egg yolks
½ cup (120 ml) key lime juice (about 12-13 key limes + one more key lime for the garnish)
2 cups (480 ml) heavy cream
2 tbsp (13 g) powdered sugar
1 tsp (5ml) vanilla extract
METHOD:
Preheat oven to 350F (176C). Spray a spring form pan with baking spray and distribute well with a pastry brush and set aside.
Place the cookies, the sugar and salt in a food processor. Process until crumbs form. Add melted butter, continue to process until wet crumbs form. Transfer crumbs to the spring form pan and shake the pan to level the crumbs and then press them tin with a measuring cup or the bottom of a glass.
Bake crust for 5-6 minutes until fragrant. Allow to cool.
In the bowl of an electric mixer, combine cream cheese and sugar, beat on high until smooth. Add eggs, one at a time, beating in between each addition. Add vanilla extract and beat and then add flour and beat just until combined.
Pour cheesecake filling into cooled cookie crust, smoothing out with a spatula until layer is leveled out. Set aside.
In a large mixing bowl combine sweetened condensed milk, egg yolks and key lime juice. Whisk until smooth.
Pour the key lime mixture on top of the cheesecake mixture, making sure you are covering all the cream cheese with the pie filling. Smooth out with a small spatula.
Bake in a 350F(176C) oven for 35-40 minutes until cheesecake is set and jiggles slightly.
Allow to cool completely.
For whipped cream topping, combine heavy cream, powdered sugar and vanilla in the bowl of an electric mixer. Whip on high until stiff peaks form. Transfer to a pastry bag with a round tip. Pipe little dollops of whipped cream all of over cheesecake until covered.
Garnish with fresh lime zest on top and a thinly sliced lime wheel in the center. Chill overnight to set.

For some reason the End Card on the Lemon Pound Cake isn't showing up? Are you guys seeing it? The end cards have been a bit buggy lately, so if you are also having trouble seeing it, here's that video! czcams.com/video/jcXvB-3vXq4/video.html . another great citrus dessert for Easter! Enjoy! xx
It showed up for me! :)
@@laurengrey2015 OK good!! So weird that it doesn't show up for me? LOL! TFS!
I see the card too :)
I see the card! I’m on a mobile device
I can see it! And I have already done this cake, it is delicious!
I will certainly give this cheesecake a try specially because here in Brazil it is much easier to find limes than lemons! Thanks for the recipe!!!
This keylime cheesecake has moved to one of my top 5 dessert recipes! Sooooo delicious! Thank you, Beth!
omg beth its about time. super excited for the garden channel. i just planted my cool season crops and started my warm weather crops under grow lights
YAY! You are so good! :) I know I'm excited about brining it back too! It's been Waaaaay too long! :)
I made this about an hour ago, and the flavor (I pinched a small piece) tastes wonderful. My only regret is that since I didn't see the size of the springform pan to use, I used my 10" pan, therefore mine doesn't have enough height. The next time I make this delicious recipe, I will make it in my 9" pan.
This is lovely- Beth you are a class act.
Oh, I'm so happy to hear that you are going to post a new video to your Garden Channel! And of course I'm looking forward to watching your new recipes on this one too :) :) Thank you, dear Beth!
Awe thanks! Should be some fun videos/tours coming up over there! :)
How beautiful is this, Beth 😅😅😅 So many layers, each component distinct in itself...Such a marriage of exquisite flavours. And those whipped cream dollops on top resembling mini meringues! How gorgeous is this dessert and not at all difficult to put together. In love 💞
Yes that's the best part! So easy, yet so pretty! Those are my favorite kind of desserts :) And SO delicious too! Hope you enjoy! :)
This looks fantastic. I won't make it for Easter this year but it is definitely worthy of a beautiful spring day. Thank you.
I made a New York Cheesecake that called for 2 teaspoons of lemon juice n the sour cream topping and I accidentally used 2 tablespoons of lemon juice and wow. Fantastic. I know I'm going to Love this recipe.
Key lime anything is a perfect spring flavour. Whether its pie, cheesecake, yoghurt or just curd spread on toast, I can't get enough!
Watching you is so therapeutic after a long harsh day!!!!

Ha! Oh you will love this one!!
Ive made this recipe sooo many times now!! it’s so good. Sometimes i use vanilla wafer instead, but still good either way. Thanks for the recipe!!!
Oh yes love the idea of the vanilla wafers! I bet that is good too! :). So glad it's been such a hit! :)

I do enjoy a good cheesecake and this Key Lime Pie Cheesecake looks divine!!
Such a simple pretty looking dessert, but one that has a 'punch' in it!

Perfect timing is right! Gardens are such a fun thing to build and watch them evoke! The eps I just shot us a before and after story on how we built it and what we did to create structure in it. So it’s a good one for your idea gathering for sure! :)

Wow! This is looks zmazing👍💜😋😋😋
Love the recipe!! Can use a blender and mix all the ingridients together? instead of puttin the lime filling on top?
Just the recipe I was looking for!
Awesome video. I love making cheesecakes but never thought about a key lime one. I will give this one a try
I hope you enjoy! It's such a yummy combo! :)
That looks really good!! 🤤🤤👍
Thanks so much for the recipe! I will try to make this soon.😃
Hope you enjoy!
Thanks 😀
Just finished making your chocolate lava cakes again (amazing!), and I’m so excited to try & make the keylime cheesecake!
Aren't those yummy! Ha! So glad they were a hot! Oh yes, you'll love this one too! So delicious for spring! :)
I made this for my husband's birthday during lockdown and he said it was the best cake he has ever had! I have since made it several more times and everyone loves it. Thank you so much for the recipe! I was wondering what other fruit topping might go with it besides key lime? Have you tried to make this with other flavors?
I'm so glad it was such a hit!! I haven't done it with other flavors, but I bet it would work with any fruit you can juice. For example, if using raspberries, work them through a fine mesh sieve to catch the juice, and separate the seeds. You can see how I do that at the end of this video :) czcams.com/video/2UCDQX6AHqY/video.html BTW this is another awesome cake to try too! Then replace the lime juice with the raspberry juice and I'm sure it would be great too! Let me know if you try it because of course now I'm curious! :) LOL!
@@EntertainingWithBeth I tried with fresh strawberry, but the egg yolk turned the strawberry puree to a most unpleasant brownish mauve color. :-| Can the egg yolk be replaced with something else? Gelatin? Agar powder?
Looks nice
Looks so yummy, love you Beth and waiting for that cookbook to roll out one day :)
Ha! Oh yes it's on the "Bucket List" and you all will be the first to know when it's coming! xo😍😍
Drool* what a delicious boujie dessert
I see it! Yum!!!
💓💓💓💓💓👌🏻👌🏻 Drooling!
oh i love to make this soon! thank you for sharing..new sub here!
Oh it's a yummy one!! I think you'll really enjoy it! And so glad you found me! Welcome to the channel! :)
😍
wonderful love from india
Hi Beth I love this recipe!!!😘👌🏽 Very beautiful! Could I also use lemons instead? 🍋
Yes of course! Same amount of juice. It would be great with lemons too! :) Hope you enjoy!
Oh what a beautiful cheesecake Beth, I didn’t know that flour takes over the need to use a water bath, that’s wonderful. Is that for all baked cheesecakes ?
Yes I've found it works every time! You don't need a lot maybe 2 tbsp-1/3 of a cup depending upon how many eggs you use. This is another cheesecake recipe that uses that technique, also a yummy one! You'll notice more eggs and creme fraiche, requires a bit more flour. But works like a charm! :) czcams.com/video/ib8ftfucw_M/video.html
Entertaining With Beth thank you very much Beth ❤️
I just did this today. Question: why my top cracked a little bit? Was there something I did wrong? Or was it normal? If not, how should I correct it? Thank you Beth!
Hi can I make this in mini cupcake sizes?
How is the chocolate crust? Will graham be better that chocolate?
In Poland we don't have whipped cream cheese, can i use regular one?
Yes of course! The regular kind works too, just beat it a bit longer with the sugar to fluff it up and get some lightness to it :)
kucibaba thanks for asking, I had the same problem😭
This looks amazing! Beth, can I use graham crackers instead of chocolate wafer? Thanks!
Hello, I want to make this recipe. have a question about the cream cheese. is it the one that is already whipped or 16 oz and you whip it
Exactly! The one that is already whipped :) Hope you enjoy!
I wonder if the whipped cream is going to keep it's shape overnight? In similar cakes usually a little gelatine is added to the cream to help it keep the shape for several days. I have guests coming for Ester dinner may i make the cake a day before?
Yes of course! The whipped cream should be refrigerated the night before. If you see the slice in the video, that was a cake I made the day before so it's easier to slice since the whipped cream firms up :) You can totally do the whole thing the day before Easter, garnishes and all! I do it that way, and pop the whole thing in the fridge and then all I have to do is serve :) So easy that way!
kucibaba I would make the cake the day before and decorate it with whipped cream a few hours before serving. Some heavy whipping cream deflated pretty quickly. It all depends on the brand so, to be safe just decorate before you serve it :)
@@DimitrasDishes good idea
Hi Beth. what size springform pan?
Oh sure it’s a standard 9” pan :) enjoy!
This looks deliciosa! Can I freeze it?
I made this and my filling curdled.
Hi Beth! Does the whipped cream say overnight? Or does it separate?
Oh sure it stays! That's why I always use powdered sugar in my whipped cream, due to the cornstarch that's in it, it stabilizes it :) Hope you enjoy!
Hi, Beth. What a beautiful cheesecake, darling. I'd love to see you make no bake lemon meringue cheesecake. Doesn't that sound like fun?
Hi Beth, I tried this recipe and it’s super delicious!!! One thing though. Just wondering why the lime part cracks everywhere and wrinkles everywhere. Is there a trick or something I missed that’s causing the cracks?
Ah OK if you are getting cracks it means the lime curd is over-baking or your oven is running a bit too hot, or you need to put it on a lower rack (lower third of your oven, instead of middle rack) Hope that helps for next time but so glad to hear it tasted good! :)
@@EntertainingWithBeth Thanks for the advice! I will try again with your recommendation ^_^
Yes it is super delicious!!
beth- if I make the cake the night before, would you recommend doing the whipped cream the day of? Or would the whipped cream be okay overnight?
Great question! Definitely do the whipped cream the day before too! Otherwise it will be messy to slice if you do it the day of. In fact I do it all the day before, even the garnishes! And pop the whole thing in the fridge and then all I have to do is serve, and everything works out great :)
There's no such things as whipped cream cheese in Denmark, at least I haven't been able to track it down. Can you use normal cream cheese instead? Because I NEED this cake in my life!
LOL! Yes of course normal cream cheese works too! Just beat it a bit longer with the sugar to whip it up nicely. Because YES you do need this cake in your life! Ha! It's just too good to pass up! :) Hope you enjoy!
Entertaining With Beth i made it this morning so we could have it this night. Beth, it slayed me and brought me back to life! Thank you for the gorgeous recipe!
Could you find key limes in Denmark or did you use normal limes? I'm not sure I could source key limes here in Norway.
Angélica Ko-Pe i just used normal limes. Key limes haven't made its way to Scandinavia yet haha
Beth, to make this quicker....Could I just add perhaps 4-6 oz. of softened cream cheese to the key lime pie batter instead of making 2 different batters? Would that thicken up the key lime pie batter?
Hmmm great question! I'm not really sure what that would do since I haven't tried it but I think it may make the batter not the right consistency for the best texture. I promise it's worth the effort of the two batters! Ha! SO good :)
Ok. I'll just make the 2 batters. I'm not sure how adding the cream cheese would taste. Thank you for the reply.
For some reason none of the stores near me carry any kind of wafer chocolate cookies. Do you think chocolate graham crackers would be a good substitute?
Oh yes I do! I think those would be great! Hope you enjoy! :)
The condensed milk in our country is quite runny... can I Still use it? Should I try to reduce it down?
We’ll just make sure it’s the sweetened condensed milk and not the condensed milk. I wouldn’t reduce it down I would use as is I think you should be ok because of all the eggs in there! Hope you enjoy!
Beth do you think I can use key lime curd instead?
Well you might be able to do that if you added the lime curd on top of the cheesecake after it is baked, and then refrigerate it overnight to set. But since lime curd is already cooked on the stove top, I wouldn't cook it again with the cheesecake, that may have some unexpected results :) Hope that helps!
Hi Beth, can you tell me what brand of chocolate wafers are these and where do you get them? That cheesecake looks delicious! 😋 I seen the pound cake thumbnail. 😊
Oh sure I use this brand. amzn.to/2ImJW9l They are cheaper if you can buy them in the store. Strangely they are usually in the Ice Cream Area near the Ice Cream Cones and such :) . Hope you enjoy!
Thank you, I have never seen them and I am one of those that love the Oreos cookie part but not the filling, lol. And yes, I have made a pie and scraped all that filling away. . .this will make it so much easier and less waste.
Oh yeah these are SO MUCH easier than the Oreo scraping :) and the same rich, dark flavor! 👌
Beth!!! I need your help so bad!!! The key lime pie keeps sinking in the cheesecake! I don’t know what I’m doing wrong. :( it’s the second time that happens.
I think that stabilized whipped cream would work better here.
I ve got a kilo of limes which will be perfect for this recipe.
Perfect timing! I hope you enjoy it! :)
I used flour and my cheesecake still cracked.
Ah, cracking ca also happen if the cheesecake was over baked or your oven might also run too hot. An oven thermometer can help with that. This video explains this concept more: czcams.com/video/FUs_sk-o_7M/video.html
Entertaining With Beth Thanks so much. Oven is def hot, and I may have over baked since it was my first time making cheesecake.
Hey, where's the attention that you deserved
LOL! Well you popped in and enjoyed it so that's enough for me! Ha! :) Hope you give it a try! :)
Hi Beth😊 I am planning to make this tomorrow I was wondering what size spring pan should I use I have the 7.2 inches and 8.5 inches. Which size would be better ?
Great question! I used a 9” so I think your 8.5 would be perfect! You may need a few more minutes baking time for the smaller pan since it will be deeper amount of batter so maybe 5-10 mins more? Hope you enjoy!!
@@EntertainingWithBeth thank you very much for your quick reply I really appreciate it and all your recipes ❤
You bet! My pleasure :) So glad you enjoy the recipes!!
