A Day in Class at The Culinary Institute of America

  • Follow me and take a short look inside the K-3, the Cuisines of the Mediterranean kitchen at the CIA with Chef Joseba Encabo. You'll get to watch me forage in the garden for fresh chard, and then bring it all inside so that my partner and I can prepare ragu bolognese with polenta cakes and sautéed chard. Enjoy!

    I can remember watching this video before I arrived as a student here. I actually begin cuisines of the Mediterranean’s next week... and in THIS kitchen!

      @@geraldmahoney4856 My bad for not seeing this sooner haha, I’ve already graduated back in Nov 2019 ! I must say that Mediterranean’s was a fun class, my favorite for sure. I had a different instructor who retired that same year though.

    I have a question because I want to go at this school . The question is if the students live at the CIA or not

      There are dorms and different houses. If you look the name of the school plus dorms up you will see a special video about it

    I was wondering if i could attend the school after i finished the education specialist chef. What's next to do and is that available at this school. (honestly this school looks amazing i haven't even started an education as a chef. I need to finish high school first. But i am already looking at this school and hopefully i can walk at the campus some day

      Ivan Palma I go to the cia try to get some work experience before you go it's not required but it is very helpful

    I had to wear a neckerchief when I went there. I didn’t see any in this video. Did they reduce their discipline or something?

      +Brenda C. Hi Brenda this is her son, CIA is a great school to go to if this is an industry your passionate in being a part of. Getting into school isn't the hard part, you have your application and essay to write and they check your experience. The hard part is staying dedicated enough to make the through the program. The chefs here are very approachable and can sense how passionate you are. I had my eyes set on CIA since the 9th grade and now I'm entering my second year. Come join the team and welcome to CIA #proudtobecia

      Actually, the hat pleats represent each way a egg can be prepared. Once you learned a new way you receive a pleat. It’s not for fashion purposes but an “achievement”. However there is shorter hats but it’s a thing that training chefs have to wear
