- CHINESE STYLE PATA TIM
1 pc Pata Front (whole/sliced)
1 head minced garlic
3 pcs star anise
1/4 cup light soy sauce
2 Tbsp Patis
1/3 cup white sugar
1/2 cup pineapple juice (unsweetened)
1/4 cup chinese cooking wine
1/4 cup oyster sauce
ground black pepper
1 can (225g) Young Corn, well drained
1 small can (115g) shiitake mushroom, well drained
*Bokchoy (blanched), optional.
Slurry: 1/3 cup cornstarch mix in 2/3 cup cold water
*3 Liters Water
*Walang mabili na bokchoy, kaya hindi ako nakapaglagay. Lagay nyo lang po ang blanched bokchoy sa gillid ng cook pata tim.
*ADD more slurry kung kulang pa sa lapot 🙂

It is better to soak in a casserole the pata in a cold water for 1 to 2 hrs, just to let the blood eased out from the inner most blood vessels. When you blanch the pata, the blood inside the meat pata will surely harden and will not be extracted.

this is good easy style to cook pata tim na hindi na mag pi prito ng pata sa daming cooking oil at nakakatakot sa tilamsik pati. yes ito parang adobo style little ingredients different star anise and baby corn ,shiitake mushrooms, etc. sarap din ang labas .
