You can cover the dough while rolling the noodles to avoid the dough become dry. Then after boil it, you can rinse it with cold water to stop the cooking process. Then, if you want to keep the noodles for some time, you can coat the noodles with oil and keep refrigerated so that it will last longer. I learnt this from my food processing class. Hope it will help 😄😄😄

Great job making noodles from scratch. Try shaping the dough into a square or rectangle before rolling. Also start from the thickest setting e.g. 9 on the machine and then work your way down to the desired thickness one by one. So you start at 9, roll it out, then 8, roll it out and so on. That way it's gentler and less likely to cause your dough to crack on the sides. Then do a tri fold like closing a book so you get a perfect rectangle shape and roll it again before passing it through the cutter. Amazing work!!!

In a true ichang channel fashion, while they could've go for maggi goreng so they dont have to make the mee from scratch, they chose to make mee goreng. keep it up, at this rate you will cook the entire mamak menu before covid ends. lol.
to answer your question, no, most people dont make the mee from scratch, we just buy premade one from the wet market or supermarket. the only place i seen that made the mee from scratch is chinese pan mee (google it) stall, but that's because they need to. most business owners just buy premade one for the consistency.

This is my first time seeing mee goreng cook with tomato. But i think it is okay. I feel proud to see world first class as Japan tries to cook our third class food. It is an honor. Thank you for that.
Mee goreng have many types. We also have mee goreng mamak, mee goreng seafood, mee goreng hailam and others.
Frankly telling, i am one of mee goreng's fan. I can make mee goreng myself but with instant mee kuning

Tepung is flour. Gandum is wheat. And yes, cawan can be like your little bowl. Basically it's "cup". Mee kuning or yellow noodles are like ramen, I guess. Your homemade mee kuning looks amazing, btw. Great job!

the noodle chewy-ness comes from the egg you added into the flour when mixing. Most handmade noodle (at least chinese) uses chicken egg (some uses duck eggs).
there are many types of mee goreng in malaysia.
    malay type
    mamak type
    borneon type
or even chinese type alone has many different variants....
*come kl visit my mom's kitchen, she'll show you how to cook chinese types & come taste them all

I seriously admire your dedication. While we in Malaysia can easily get all those ingredients (ready-made) in the sundry shop/market... both of you put in much effort to make it on your own. Absolutely amazing... and for most Malaysian, mee goreng is like an every day, anytime-dish whether it's for the morning breakfast, afternoon lunch, evening high-tea, night dinner or for late-night supper. Usually, we don't make our own noodles back home because we can get them fresh noodles from the market. Of cause even getting from the market are also considered fresh because usually these noodles won't stay fresh for long (between 3-4 days at most).

    Me: *shivers*
Ok there are various types of mee goreng in Malaysia. It can be 'char' where it has the burnt taste due to high heat. It can be a bit wet with a little bit of sauce, where we call them mee goreng basah. The famous one is mee goreng mamak where they mix prawn cakes and eggs together with the noodle. Last but not least the common mee goreng is the one you cooked which how our moms usually make. Comfort food🥰

Mee goreng is something easy to cook even if you do not have any meat (chicken, prawns, squids, eggs etc). You can just "goreng" mee kuning with just vegetables and it will taste just as good. I usually do not add chilli sauce, but will use cili boh, tomato sos, oyster sos and kicap manis and one anchovy cube stock (knorr/maggi). Sedap 👍🏼
