Kirk and Vulcan Science First Officer Mr Spock, together with the rest of the Crew - Chief Engineer Scotty, Doctor McCoy, aka Bones, Mr Checkov, Communications Officer Lt Ulhura, etc, of the Federation Starship Enterprise weren't just members of a crew on a long ago TV show and the subsequent iconic Movies, cared about, watched out for each other, sacrificed for each other were a family - where Spock sacrificed his life for the Crew of the Enterprise - "The needs of the many outweigh the needs of the few, or the one" .. but to Capt Kirk, the Crew of the Enterprise "The needs of the one (Spock), outweigh the needs of the many (Crew of the Enterprise" ) .. as we their fans all shared in their dangerous trek across the Universe - "To go where no man has gone before" .. with the iconic music theme of the show that is incontrovertibly unmistakable in it's recognition. McCoy's "last word" was played so well. All 3 of the actors playing Kirk, Spock and McCoy really fit the parts. They played so well off one another, and made them so believable. "Sarek" was great to in the moment.
The Deforest Kelly was truly made for that role. I never doubted that he was the doctor because it fit him so well. And the interesting thing about that was that Roddenberry had offered him first option of playing Spock or McCoy. He felt that McCoy was a better fit, and he was right. Unfortunately I never saw him in any of the westerns he did for so many years. At some point, I'm going to have to go back and check them out.
According to the book "The Making of Star Trek" DeForrest Kelly considered becoming a doctor at one time, and if the acting bug had not bit him, he might have gone to medical school. Interesting.
I only remember seeing him outside Star Trek as a wild, drunken doctor in one western. Having grown up on grumpy but kindly Dr. McCoy, seeing him like that about terrified the crap outta me.
Bones is the reason I am able to watch Startrek with my Firefighter Grandfather. He doesn't get the scifi stuff but he loves bones and the western elements
I'm 61 now & my parents were not scifi fans how ever they watched ST TOS new & in syndication . perhaps it was characters they could relate & great writing that held their interest. My Father & I still watched this series together well into the 90s before his passing .
I think Sarek did that on purpose to be honest. I think because of the transfusion he and Spock had a lot more quality time by Vulcan status and I think McCoy spearheaded it by asking if Vulcans had a sense of humor.
I like to think Sarek was communicating telepathically during that scene. Amanda is understandably upset, but he smooths things over through their bond like "I'm sorry, you know I love you."
Apparently DeForest Kelley feared Star Trek fans putting "I'm dead, Jim!" on his tombstone that he made sure his will told his family to cremate his body after his death. And have the ashes poured over the Pacific Ocean.
Anyone notice that slight smile on Sarek's face @ 2:11? Vulcans aren't completely without emotions, they just hide them very well. He has to really love his wife a lot for him to crack even that subtle of a smile.

For a Vulcan that would be considered a huge grin.
Vulcans have a lifelong training in suppressing their emotions. And remember Sarek is fully Vulcan, while Spock is half Vulcan/half Human. This led Spock to believe he would be out of place on either Earth or Vulcan. Only in Starfleet's multi-cultural makeup would he be free to pursue the life he wanted. Logical.
After getting stabbed, nagged by diplomats, listening to annoying cracks from an assassin and fighting a space battle, I think I would’ve enjoyed a couple day’s rest in sickbay.

I think that's why Sarek immediately took the chance to shower his son with Vulcan praise by insisting that Spock acted logically. He knew that that was higher praise to give than human style gratitude, because it allowed Spock his dignity while also subtly communicating that Sarek approved of Spock.
Spock will have his revenge a few episodes later when he tells Kirk and McCoy, "I believe the two of you will be insufferably pleased with yourselves for at least a month. Sir."

But I've always wondered about what could possibly motivate Pirates to undertake a suicide mission. People will often die for freedom for others, glory, principles, King & Country and will indeed risk a lot for money. But to actually go on a suicide mission merely to make someone else rich seems pretty far-fetched. Of course the Orion's are not humans so their thinking may see honor in such an action. Yet still, the writers who could imagine the imposed decorum that would prevent McCoy from telling Kirk to also just shut up, even in a plainly jocular moment, couldn't develop a better motivation for the protagonists of this episode?

It's all the more remarkable because Kelley played many villainous roles over the years before Star Trek, but on this show he had a heart of gold.
