I made this on Sunday and it turned out really really good! I'd advise you to make the rice first, then prepare the sour cream and salsa while the beans are cooking so that you serve the dish nice and hot. It's very easy to make. I added a bit of lemongrass to the rice just to give it a little flavour and smell.
