    So I tried out this recipe today, after looking through too many and settled on trying this. I tell you what, the donuts are really, really light, airy, crispy on the outside! Could not believed it! I use a smaller cutter so I got 8 pieces. There are many comments on the type of flour, TBH, I could not figure it out too. Many other recipes call for bread flour, but I see the author's reply on one thread that she said "soft wheat flour", so I used cake flour for this. the dough is extremely wet, took some effort to handle but still workable. And as per the video instruction, I only did one proof, that is after shaping, overall, this recipe works and I will use it again for my future donut recipe! Love the lightness.:)

    Just tried the recipe and I am blown away. The only thing that I’d work on is adding a little salt somehow to the dough. It tastes a little plain unlike the Krispy Kreme donuts were used to

      Can you share what temp. worked best for the grease to be at when frying? The eggs shown also look like just egg yolk. Can anyone share if that is both the yolk and whites? or Just egg yolks? I can't find where that info is? Does this recipe have a conversion to cups rather than grams?

    Mine turned out great! Heated milk to 110 degrees. Added yeast for 6 or 7 minutes until frothy. Used white bread flour.

      Unfortunately, that is incorrect. Recipes for cakes and cookies need soft wheat flour which does not develop the gluten. Recipes for breads and donuts need a hard wheat flour to develop the gluten needed for yeast recipes. Using a soft wheat flour such as cakes and cookies will give you an unsatisfactory result in this donut recipe. A hard wheat bread flour is what is correct for this recipe.

    I have to say that this recipe totally changed my donuts, I made donuts a few times at home and they were ok but they tasted homemade, I used butter and AP flour, this recipe turned out perfect! The key is the shortening and the wheat flour 00, I wana thank you for doing the work to create this recipe!! Thanks

    When I was young you could stand in your kitchen next to Grandma and learn to cook things perfectly. You didn’t know what exactly the measures were, but you had eyes to see and a brain to remember.
    It always amazes me that people these days can no longer seem to use the “extrapolation” function in their brain! Too much spoon feeding of information by machines I guess. Be detectives, not loud rude babies for a minute people.
    This is a wonderful video! I had no trouble in making these and they taste perfect! Great job on this! They are my favorite donuts and I can’t go get any with the way things are right now!

      It's not spoon feeding. It's the fear of fucking up, maybe you and your grandma didn't grow up in such a competitive world like we do.       @@trish8321 have to agree with Trish on this. Baking is NOT cooking. You have much less leaway with baking. Details, like quantities and specific ingredients matter more. For example, it does matter which flour you use if you want a specific outcome, based on protein and gluten content. Or how much baking powder you add.
      For cooking, Joanie is correct in her assertion. Use your intuition, knowledge and experience, both good and bad to make your own decisions. Taste and perfect the recipe as you go. Make it yours and put your signature on it. You have far more latitude to improvise than you do in baking.

    how thick did you roll your dough? before seeing this I did mine 1/2" and it was too thick.
    also, whats the reasoning behind flipping them often as opposed to browning 1 side at a time? does it help puff them up, keep them less oily?

    Thanks a lot for this recipe! I have been trying to make doughnuts close to krispy kreme and this is the closest, it's like cotton, super soft 🙏
    I also tweaked some ingredients just for our liking and available at our cupboard haha. We made for 2 batches of this, just divide it by 2 if going for 1 batch only.
    420 Bread Flour (First Class or Hard Wheat Flour)
    160 grams egg (this is almost 3 whole large eggs- asian sizing, with left over approx. 10g/ml)
    100 grams melted shortening ( Puratos Brand) we'll try Crisco Brand next grocery shopping 😂
    60 grams brown/washed sugar (don't have white sugar left)
    220 ml warm milk (Full Cream Milk)
    20 grams Instant Yeast
    4 grams Salt
    --------------------------------
    We first proof the dough, just to experiment -45 minutes
    Second proof after shaping using thin kitchen cloth as cover -25 minutes
    Frying:
    We made a mistake by frying it on low heat, it turned a bit oily. Next try we'll fry it on Medium High maybe about (375 F or 190 C).

    I tired making doughnut, four times now my doughnut come out hard 😰💔. I use my hand to knead. It there a way I can make it soft and fluffy?

      10 minutes needing with a mixer, 20 minutes by hand. To be extra safe, you can always grab a piece of dough between your fingers, stretch it, and see the fibers that have developed. If your dough rips as soon as you start pulling keep kneading :)
      Don't over need either as the same issue. The video is sped up so it's not that clear but notice how stringy the dough is at the end, before cutting into circles. Good luck!

    What is the difference between wheat flour and allpurpose? Isn't it made of wheat, too? Why not butter? We don't have shortening in Europe.

      Ive tried many times with AP flour and butter and it comes out good but is never perfect, there was something always a lil off, but I ordered the enriched wheat flour type 00 and crisco shortening and they turned out perfect! The wheat flour was only 6.00$ American dollars online and the crisco was only 4$ online, the wheat flour is lighter and finer, if your looking to get them as close as you can to krispy kreme then these 2 ingredients are the key, but butter and AP flour still make a good donut! Hope you can find them online, and good luck on your next batch of donuts, have a good day!

      You need to use bread flour for the correct texture for donuts.

      He put a link for 00 flour. i guess this is somewhere in Europe. They call it wheat flour but so is all purpose flour. What they refer as soft is just a very fine flour such as 00 flour used for breads and pizza dough with a higher protein or gluten content.

      Hi. Depending on how warm the temperature is where you live, it could take 30mi to 1hr to double in size. Regarding storing the dough, I can't say as I haven't done the testing

    What if i use fresh yeast how much do i put? Or do i just add 10% more cause thats what my baker told me

      Easier for me to remember: one ounce of compressed fresh yeast is equivalent to two packets of active dry yeast (from George Greenstein, author of "Secrets of a Jewish Baker ".

    I can’t seem to find wheat flour. I can find whole wheat flour. Have you ever tried cake flour? It’s less glutinous than all purpose flour. Let me know.

      Baby baby girl all purpose, bread, cake, pastries flour, semolina and of course whole wheat flour, everything I listed and more are all kind of wheat flour, they are all made from the wheat kernel, the way it's processed is what determine which category they fall under. for Donuts you going to need a lighter flour with some gluten in it. if you can find pastry flour that will be your best shot, if not I would use regular all-purpose bleached and enriched which can easily be found in all stores, just read the label and to achieve the lightness substitute small portion with cornstarch for example if you are following her recipe to the T, it says 210 grams flour which is about 1 and 3/4 cup after you measure that, take 2 tbsp out, and substitute it with the same amount of cornstarch. OK good luck

    HELP
    Experienced Bakers
    On hand: whole wheat flour, all-purpose flour, homemade self-rising, coconut flour, almond flour, & rice flour.
    What can I mix to get close to 210g wheat flour?
    PS: Alexa used to do the math conversions for me. Now she refers me to CZcams vids on metric conversions. PPS: Will be purchasing an inexpensive electronic kitchen scale soon

      I just read someone’s comment and it said 00 flour which I think is to make pasta 🤷🏻‍♀️I maybe wrong, I think it has different protein contain then the flour you have mentioned.

      You need high protein flour. It is used for breads, donuts that use yeast. It has the gluten needed to create the correct texture. It is the exact opposite of soft wheat flour that us used for cakes, etc. There you do not want gluten.

    I tried this recipe and it's almost perfect. I just have a small problem. My donuts seems to be very oily from the inside. Is it because of the shortening or my frying? Do you have any advice?

      Hi, when adding the shortening, be sure to incorporate properly. This could be due to temperature when frying. What you want to do is, fry a small piece, once cooked, then begin frying the donuts, as doing so will get the oil to the right temperature. Make sure your donuts are not too thick when cutting them. They cook very fast, so, don't have the oil too low, doing so, will make them oily

      You can try Organic "Refined" Coconut oil, it has no flavor. Good luck!

      Hi, glad you like it. Just remember , when frying, make sure the room temperature is cool, open your windows and doors if you have 2... lol as warm room temperature can effect the thin crusty layer of the doughnuts, which is very important

I am living in Argentina right now, and I miss them a lot!!!!!! 😢 during 3 or 4 years I have been trying ordinary doughnuts 🍩 but they don’t taste like Krispy Kreme 😂 you are amazing!!!!!
