The racing mission for this game is absolutely insane. Its the only reason I couldn't finish it fully on classic, I had to lower it just for that one mission.
you should play the original. In remake i made it in two tries but in the original it took me like whole night to get over that mission

It took me forever to get the race done in classic. I figured out that tapping x for turns works best for me. Getting that game platinum was a pain in my ass.
