Green chilli - 5 or as per taste + 2
Cumin seeds - ¾ tbsp
Curd - ½ cup
Turmeric powder - ½ tsp
Salt
Coconut oil
Water - ¾ glass
Curd - ½ cup
Hi everyone, today I am here with a super easy simple pressure cooker avial recipe.
To prepare the avial, first cut all the vegetables of your choice into thin strips as you can see in the video and transfer everything into a pressure cooker along with five green chilies or green chilies as per your taste and half a teaspoon of turmeric powder and some salt..
next, add some coconut oil and toss everything really well so that the salt, the turmeric powder and the oil are evenly spread between the vegetables.
You may use any vegetables you have in hand, I have given the list of vegetables I have used in the ingredient list.
Add ¾ glass of water or just enough water to cook the vegetables.. do not add too much water, else it will turn soggy and watery.
Close the lid off the pressure cooker and pressure cook it for just one whistle or until the vegetables are cooked.
While vegetables are being cooked, prepare the coconut paste by adding a whole grated coconut into the jar of a mixer grinder along with half cup of curd, 2 green chillies and ¾ tablespoon of cumin seeds.
You need not grind the coconut into a fine paste, gently crush with 2 to 3 pulses of the mixer grinder until it’s just crushed.
After all the pressure has escaped the pressure cooker, open the lid and check if all the vegetables are cooked well..
make sure that the vegetables are cooked, and then add the prepared coconut curd paste to the vegetables and give everything a good mix.
Cook for a few more minutes with the lid open and let it dry up a bit before adding 2 tablespoons of coconut oil..
After it’s done, simply add 2 tablespoons of coconut oil and give everything a good mix for the wonderful aroma and taste.
With this, easy Avial is ready to be served..!! - Jak na to + styl
