  • Today I'm going to teach you how to make famous Jamaican jerk pork. this jerkporkrecipe I am going show you step by step on how to clean and prepare the pork and the different type of seasonings I used to make the jerk pork marinade I used my blender to blend up onion, thyme garlic and green onions I added powder season to the mix. And for the dry rub I also use powder seasonings the pork with I am going to show you my grilling technique and how to make jerk pork using a charcoal BBQ. I will also show you how I made my own flavourful sauce to coat the jerk pork to keep that rich flavour and keep it moist. to bring out the mouth watering flavour.
    So you can make it from scratch right in the comfort of your own home from my kitchen to yours and it is just a screen away. My number one goal is to passed down my cooking skills that I mastered over the years so everyone can learn how to cook. I have been cooking from when I was 10 years old.       The dipping sauce is the same as the marinade sauce. I just boiled it after I took the meat out of the marinade sauce.

Is there any way I can get in touch with you, I have a few questions to ask you. For ex, we don’t get scotch bonnet here in India, so can i use our local green chilli instead and add a piece of apple to it coz I heard scotch bonnet taste like spicy and sweet. 🙏

    In the Dominican Republic we boil the meat first after we marinated just to make the meat more tender this just a advice ee yea man 👍

      I use the same marinade sauce from the pork just add 1 cup of water and boiled it that the sauce

      @@chefhenrykitchen At the 13:24 point, you have the big bowl of dipping sauce, but what liquid did you use to get the leftover marinade to such a large amount of liquid? I know you need to boil it first to kill the germs from the raw pork or do you just make a whole new batch? Will doing both your pork and chicken as soon as the weather cools down a bit.

    I wonder why you did use hardwood, hickory or other type of wood instead of coal? Is it because you can control the flare up and temperature better?

      Not too sure what you are asking. All I can say to you is coal burns at a higher temp that wood and longer and you need high Temps to break down pork tissue and make it tender.

    Just a few questions: I noticed your coals aren't completely white before you put the meat on. Do you suggest medium or high heat coals? How often are you turning the meat? How long into the cook before you starting dipping? Drooled during the whole video!!

      I light the coals and wait till the fore dies down before putting the pork on. I just used regular coals not a specific kind. I turn and dip my pork each time. I put the pork on for 30 mins and than every 15 minutes I turn them, as I'm turning I'm dipping. Thanks for the comment and the support. Please share this video with your friends

      I just moved out of Detroit go to K & F international market on 9 Mile right by Coolidge highway they have a bunch of Grace products which they use in Jamaica and just so many African and Caribbean seasonings and cool cuts of meat the meat's not the best price though I usually just go there for the seasonings.       You can also get browning by cooking brown sugar until it turns thick or you can also use molasses

    Whats the difference between the jerk seasoning and the Jamaican jerk seasoning?

      The Jamaican powder seasoning is less salty and it's miss of herbs and spices to bring that jerk taste to your table

      You can add scotch bonnet pepper into the wet marinade while blending for the spicy part. Real jerk chicken in Portland isn't spicy, we add spice to the chicken. Not everyone likes spicy so we make it for everyone

      You don't need to tenderize meat if your slow cooking it over a charcoal BBQ. It will come out juicy and tender without beating the flavour out of the meant.

      @@chefhenrykitchen Wouldnt you have to offset for it be a slow cook.. You were cooking directly over the coals… I wasnt talking about pre boiling it because I dont agree, I meant for you to wrap in foil after the pork gets the smoke and color and allow for it took cook down in its juices
