❗️Attention, I recommend using ingredients in grams because it is a more accurate and correct recipe! * Cup = 200 ml
Ingredients
🍰Cake base:
1 egg
50 g (3 tbsp / 1.7 oz) sugar
Peel of 1 lemon
40 ml (2 tbsp / 1.4 fl oz) vegetable oil
50 g (4 tbsp / 1.7 oz) flour
3 g (1/2 tsp) baking powder
Baking pan 20 cm / 8 inches
Bake for 15 minutes at 180 °C / 360 °F
🍋Mousse:
10 g (1 1/2 tsp) gelatine
100 ml (1/2 cup / 3.5 fl oz) water
Mix and set aside
Melt before adding to the lemon cream
2 eggs
50 g (3 tbsp / 1.7 oz) sugar
Peel of 1 lemon
Juice of 2 lemons
20 g (1 tbsp) butter
Add melted gelatin
200 ml (2 cups / 7 fl oz) sweetened cream (30%)
Beat until firm peaks form
Add lemon cream to the whipped cream
Mix well
Assemble the cake as shown in the video
Place in the refrigerator for 3-4 hours to stabilize
🍦Merengue:
150 g (3/4 cup / 5 oz) sugar
50 ml (3 tbsp / 1.7 fl oz) water
Make syrup
2 egg whites
a pinch of salt
Start by beating the egg whites
Add the syrup by pouring it thinly
Decorate the cake with the merengue
Caramelize

Good morning Berlin, what a beautiful bake! This really looks so smooth and delicious, well done. I like the base, not too thick and soft and fresh. I had a baking disaster during the weekend. I baked a coffee cake, I doubled the ingredients and what a disappointment. My son says the baking chemistry went wrong in the oven, the cake was a dry as dust and I wasted caramel filling as well as the coffee covering. Worst of all, I think too much filling and the cake was sliding about. It was most horrible. We sliced it, it tasted horrible, I took newspaper and dumped the complete cake on that and folded it up and in the bin. I tidied the kitchen 1,2,3 and that was that. I actually wanted to bake biscuits as they last a bit longer, and that is what I got for not following my intuition!!! Have you ever had a bad baking experience? It is not nice, the first time in many years of baking, as they say, a first time for everything. What a waste that was. Watching you prepare and bake gives me new hope to bake something else. Hi Elize! So sorry to hear your baking trouble, but let's agree it is Full Moon that affects. Of course, I have had lots of failures in the kitchen. Not only baking. Once I dropped camera into the soup, and another I confused salt with sugar, can you imagine how tasty the biscuits were. So, it's part of the job. Next cake will be a victory!
