Alaska Yellow Eye Pistachio Parmesan Encrusted Rockfish (Catch, Clean, Cook)

We took our last fishing outting for the year on Labor Day Weekend and ended up with one Rockfish. We took it home, pulled out a couple others that had been in the freezer for too long, and cooked them up.
