I used to work at an ice cream shop that did this. Instead of making rolled ice cream with just a base, we would add a scoop of scooped ice cream and about 3/4 cup of a heavy cream and condensed milk mixture then combine the two to make rolled ice cream. I think it tasted a whole lot better than just regular rolled ice cream.

I miss the ice cream shop we had in my town, they were called the cow, was honestly the best ice cream i ever had in my life, they had over 47 different flavors and types
Hard scoop icecream has a different type of crystallization process with the ice itself inside the icecream - it’s easier to think of this as if it’s rocks and platelets - ice is a crystal which likes to stack itself to become a larger block of ice and condense into a solid rock hard form. it’s churned so the ice is evenly broken up and gets to consistency. - instead of a block of ice like a rock you’re left not with gravel but like sand. You want it to be very fine evenly mixed pieces of tiny ice flakes not a solid hunk. when put on a cold stone those ice crystals just get chilled colder and colder and are able to also freeze the rest of the cream making it basically a rock and not mailable- it’s getting colder and colder condensing in on itself. Adding milk helps bring it back up to a warmer temperature - it’s liquidy yes but it’s also not formed into ice yet it’s not crystalized it’s atoms are moving faster then the frozen block. Once mixed they then to get chilled by the cold stone back into a shapable form. Those original ice crystals were melted but are still cold enough to reform. The issue is your flavor will be weaker overall and the gum used in hard icecream which gives it the softness/pillowy/airy/chewy consistency will be out of ratio it won’t keep frozen for as long and melt faster it won’t have the same consistency obviously

As someone who’s worked with ice cream, I can say, some of those flavors can be really tough to scoop. Like when you get that tub of ice cream out of your personal freezer and it bends the spoon when you dig in, is how hard some ice creams can be at some of those shops. So manipulating it to be able to roll it can be a pain and definitely requires some type of milk to break it down and soften it.
@@Vespyr_ When I worked at a restaurant I used to keep my ice cream scoop in a 1/9 pan filled with water placed on the flat top. The hot water definitely helps with scooping but since the pan he's rolling the ice cream on is -30c the scoop's not going to help with rolling

Most places that mix your ice cream on a slab have their scoops sitting in luke warm running water as well which helps for easier scooping and mixing, and also cleans off previous flavors (is what it’s mainly for).

I am a lactose intolerant person and I am trying to let everyone know that there is a way to enjoy ice cream with this problem. Lactase enzyme, which is not produced in people with intolerance can be bought in pharmacies and on the internet, it is inexpensive and after taking it you can eat any dairy products. I used to be a manager of a rolled ice cream place that is now out of business, because people view this as a novelty. No one actually wants to eat extra frozen ice cream in a fun shape. The ice cream comes off more frozen than traditional ice cream, and usually more expensive and you get less. Once you try it and realize its not special, you'll want your normal ice cream.
Definitely so good with fruit! It's soft but crunchy at the same time. Like it crunches but in a very delicate way and melts instantly which takes a little bit to get used to

I *aktchually* think that flavor is called Nube. I was recently in Spain and every Ice cream shops had a similar blue ice cream with "Nube" labelled. It tastes like gum (Hubba Bubba if you've ever tried it). Tastes really, really weird, but low-key kinda good.

Yes milk does work,but cream works better,milk can freeze and become watered down,cream doesnt really do that or condense milk,either of those is the proper common choice,only use milk if thats really all you can find otherwise its just gonna taste watered down and gross.

I am a lactose intolerant person and I am trying to let everyone know that there is a way to enjoy ice cream with this problem. Lactase enzyme, which is not produced in people with intolerance can be bought in pharmacies and on the internet, it is inexpensive and after taking it you can eat any dairy products. I hope this helps someone.

I used to be a manager of a rolled ice cream place that is now out of business, because people view this as a novelty. No one actually wants to eat extra frozen ice cream in a fun shape. The ice cream comes off more frozen than traditional ice cream, and usually more expensive and you get less. Once you try it and realize its not special, you'll want your normal ice cream.
It actually has different texture than if it was just a scoop. It's nice, but not worth the price.

Definitely so good with fruit! It's soft but crunchy at the same time. Like it crunches but in a very delicate way and melts instantly which takes a little bit to get used to
