BHINDI DAHI MASALA
Preparation time 10 minutes
Cooking time 25-30 minutes
Serve 2-4
Ingredients
For Sauteing
½ kg Ladyfinger (trim the head & tale) भिन्डी
2 Green chilli (slit into half) less spicy हरी मिर्च
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
½ tsp Coriander powder, धनिया पाउडर
1 tsp Mustard oil, सरसों का तेल
1 tsp Oil, तेल
Salt to taste, नमक स्वादअनुसार
1 medium size Tomato, roughly chopped, टमाटर
For Curd Mixture
1 cup Curd, beaten, दही
½ tsp Turmeric Powder, हल्दी पाउडर
1 tsp Degi Red Chilli Powder, देगी लाल मिर्च पाउडर
1 tsp Coriander Powder, धनिया पाउडर
Salt to taste, नमक स्वादअनुसार
½ tbsp Mustard oil, सरसों का तेल
1 tsp Gram flour, बेसन
For Ginger Green chilli Paste
1 inch Ginger, peeled, अदरक
2 Green chillies, cut into half (less spicy) हरी मिर्च
Salt to taste, नमक स्वादअनुसार
For Gravy
1 tbsp Oil, तेल
½ tsp Mustard oil, सरसों का तेल
1 tsp Cumin seeds, जीरा
½ tsp Fennel seeds, सौंफ
1 tsp Coriander seeds, धनिया के बीज
Prepared Ginger Garlic Paste, अदरक लहसुन का पेस्ट
Prepared Curd Mixture, तैयार किया हुआ दही का मिश्रण
few fresh Fenugreek leaves, ताजा मेथी के पत्ते
½ cup Water, पानी
½ tsp Sugar, चीनी
Sauteed Ladyfinger, सौतेद भिंडी
For Tadka
1 tsp Oil, तेल
2 tsp Ghee, घी
5-6 Cashew Nut, काजू
5-6 Raisins, किसमिस
3-4 Button chilli, बटन चिल
1 tsp Coriander seeds, crushed, धनिया के बीज
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Sauteing
In a large bowl, add ladyfinger, green chilli, degi red chilli powder, turmeric powder, coriander powder.
Add mustard oil, oil, salt to taste and mix well.
Heat a pan on medium flame, transfer the marinated lady finger into the pan and saute well.
Add tomato and saute for a minute.
For Curd Mixture
In a bowl, add curd, turmeric powder, degi red chilli powder, coriander powder, salt to taste.
Add mustard oil, gram flour and mix well. Keep aside for further use.
For Ginger Green chilli Paste
In a mortar pestle, add ginger, green chilli, salt to taste and grind it into a rough paste and keep aside for further use.
For Gravy
In a deep pan or kadai, add oil, mustard oil once it gets hot, add cumin seeds, fennel seeds, coriander seeds and let it splutter well.
Add prepared ginger garlic paste and saute well.
Add curd mixture and mix well. Cook on medium flame for 2-3 minutes, add few fenugreek leaves, water and mix well.
Add sugar, sauteed lady finger and tomatoes and mix well on low flame.
Once done transfer it into a serving bowl, pour the prepared tadka on top of it.
Garnish it with coriander sprig and serve hot with roti.
For Tadka
In a pan, add oil, ghee once it's hot, add cashew nut, raisins, button chilli fry until light golden in color.
Add crushed coriander seeds and let it splutter well.

Yes coriander is actually our national spice.Its not just used in punjabi cuisines but in other indian cuisines too, like in south indian cuisines its used in large proportions especially in non veg curries.
My mom is tamilian, whenever she or my maternal grandmother cooks any tamil style non veg curry they just put 3-4 heaped tbsp of coriander powder in it. And in my paternal grandmother's (who is punjabi) kitchen almost every dish starts with roasting and grinding of coriander seeds.
It's an underrated spice and also my favourite.😋😋

Tried this recipe. Turned out awesome! I have always eaten dry preparations of Bhindi. So this semi-gravy version was a refreshing change. Thanks Ranveer. Only tip based on my prep... Chilli powder is being used at different stages (Bindi marinade, curd mixture) so adjust the quantity in each otherwise it can become quite spicy.
I am so going to try this recipe. My boyfriend is German and vegetarian and he loves bhindi. In Germany it’s hard to find good okra but once in a while in the Indian store we find. Thank you so much for the recipe :)

Made it yesterday at iftar ,, it turned out awesome and I'm zero in cooking ,, I just follow all CZcams recipes, frame to frame, step by step and because I'm a picky eater, I just tweak them with my own slight touch from recipe to recipe if I feel so ,,
Yesterday in the dahi masala bhindi, I just added chopped tomatoes and onion to your method, did a lot of bhunaing ( tempering ) until the oil separated ,, it turned out yumm ,,
And just as you said, truly the touch of roasted kishmish, kaju and button mirchis ( I deliberately skipped dhania ) was outstanding and made the whole difference to the taste of the dish ,, I have the pictures and vdo ,, wish I could share with you 😀
