If they have any bank account they can request for the bank statement, you can also request for statements of mobile money transactions and add a cover letter to explain that they are self employed so they don’t have regular payslips to demonstrate but the only way they can demonstrate that is the attached document (bank statement or momo statement)
Note: if you add a cover letter and any other statement part from bank statements you will need to get those documents certified to make them more genuine and acceptable.

Please I have worked in a nonprofit organization in Ghana as a volunteer member but now in academics how can I get a recommendation from the organization in case the one to write the letter is not around now I am in UCC as a researcher.

Consider reaching out to someone with access to their letterhead and stamp to write the letter, or alternatively, you can send them a drafted letter to be signed and printed on their official letterhead.
