Zeitgiest Holocaust well it's better rather than having to realize that the truth of carbonara, it doesn't contain cream. Either my whole life about carbonara is a fucking lie about not containing cream at all or I'm just too stupid to not know about it.

It's probably the first thing. A lot of people make "carbonara" which ends up essentially being alfredo with bacon in it, so it's very possible you just haven't had a more authentic version.
Yeah when we think of things that are creamy, especially pasta dishes, we think it's the cream. It's a common misconception.
Michael he said it begins with eggs and he then said we START, NOT BEGIN, with flour
tip for adding the egg without making scrambled eggs... add the parmesan into the egg and THEN add the mixture to the spaghetti!
To make it even less likely to scramble them, add some pasta water into the egg/cheese mixture and mix before pouring into the pan.
That is how I have always seen it done, eggs and cheese together.
Isn't it easier to just take the pan off the heat?
Your first time Is better to use bain marie to get the feeling for the correct temperature

Carbonara with garlic is perfectly fine, especially if you want it to have literally any flavor at all. Some people make carbonara with wine which is NOT okay.

Pro-tip: put the eggs and cheese together and combine them, this will insulate the eggs from the heat when you add it to the pan and it will ensure the eggs and cheese become one as a 'sauce' in the pan.
CowsR4me also add dribbles pasta water if the egg and cheese is too thick

As an Italian I am of course required by our law to grade this recipes.
The Standard Carbonara gets a 10/10 for stand alone goodness and a 9 for adherence to tradition; there is some debate even here about the details of the OG Carbonara recipe. Guanciale is the best choice, but garlic is a bit of an addition, if a perfectly reasonable one. There is an ongoing debate regarding the use of parmigiano (parmesan) VS pecorino (sheep cheese), but I'm in the parmigiano party. "There is no cream in true Carbonara" was worth a whole extra point, btw.
The Vegetarian one is of course quite lower on adherence (I'd say 6, because there was an honest attempt to adapt it as close as possible), but the use of shiitake mushrooms (that I love) was reasonable enough to move my taste judgement up to an 8.
Of course, I'm just a rando on the internet, but Italian law is pretty strict about passing judgement on pasta recipes online. Sorry to bother, but great job!
I do almost 50/50 pecorino romano and parmegiano, and rule #2 - no garlic what so ever. Italiasquisita told me to do that. You clever Italians can cook... Check their carbonara reaction video
In accordance with English law I am reluctantly obliged to act shocked there were no tomatoes in this Italian dish.

Also team pamagiano, for me the cheese is sharper and saltier than pecorino, and when I make carbonara, I never have to add salt except when boiling the pasta. That being said, I would never turn my nose up at pecorino, but I would always sprinkle some over the pasta, never in the sauce.

Been watching your channel for a couple months now, and made this for my pre-fast meal late last night with turkey bacon instead due to religious restrictions. Was amazing, looking forward to making more of these recipes throughout the summer.

I'm no Andrew Rea, he's amazing but I have some really easy dank recipes like chili, spaghetti with meatballs, stuffed chicken, fried chicken, etcetera. If I had a camera and time I would make vids. Also, check out Brothers Green Eats. They have great easy and cheap recipes. I love the pasta aglio e olio from Chef. It's delicious and easy, even if you f*** it up and add way to much olive oil and burn the garlic, like I did.
for 100% traditional italian carbonara you would want: lots of black pepper, pecorino instead of parmesan, no garlic, mix cheese with eggs before adding and take pasta off heat before adding to make totally sure eggs don't overcook. I don't remember exactly how Dev makes it in Master of None though and this channel is about showing recipes from tv and movies.
Anyway. What's in the video is way better than most north american attempts at carbonara. Totally correct about no cream, eggs don't appear to be overcooked, looks delicious. The mushrooms are a really cool idea for a meatless version, I want to try it now. This is a great youtube channel.
He slips in the "kill the heat" bit pretty quickly, but that part is at least correctly done here (and since it's an induction top, no residual).

I work in a the restaurant of an hotel, I've had people ask me for a vegan scrabbled eggs...

Scramble soft tofu, that's the most popular way. Slightly overdo your seasoning, especially with black pepper, which people will associate with a decently seasoned egg. Something else which works really well, add a little celery root and celery leaf powder to the salt that you season the tofu scramble with.
There are processed vegetable alternatives that work for "scrambled eggs" for vegans... I've never seen a restaurant that had those on hand however (possibly some specialty ones do, but I've never known, nor known of, one that does in twenty years in the industry). My experience has been that anyone vegan is best avoiding eating out in the middle of the US.
Or indeed, anywhere else in the world. RIP vegans.

Found this channel a few days ago and I have to say its one of the best things on youtube.
Made this tonight and came out fantastic. I was worried about scrambling the egg on a too hot pan or even too hot bacon. I found that by reducing the heat when adding the pasta, then removing from heat when adding the egg resulted in creamy goodness. Hope this helps anyone else out there!

__Phantastica. I like to mix the pepper, yokes, and parm in a big bowl, add noodles to the bacon and the bacon and noodles to the mixing bowl. I keep it moving in the mixing bowl till it cools a bit and then add a touch of reserved pasta water to loosen it slightly.

I do my own carbonara at home. I fry the pancetta in Bertolli (butter with olive oil mixed in) and use pecorino cheese instead of parmesan. For added richness, I melt / stir a knob of butter into the finished product before plating.
Writing this while chewing this pasta. Probably the best carbonara I've ever had, with the addition of prosciutto ham. Love your work, Babish!

I think it's more important that there be no cream because it completely changes the dish and mutes all the flavors. At least garlic doesn't take anyway anything from it.
Sure, I say have it how you like it. I find Garlic over powers the flavours as much as Cream mutes them but to each his own.

My great grandmother had an Italian friend about the same age as her, I had southern grandma cooking and old school Italian cooking, and you best bet that Grandmama Podana made her dishes the way she saw fit. Carbonara had garlic, cream every now and again and bacon. I'm sure if I could ask her what she thought of ingredients being added or removed from Carbonara she'd say "It comes from the heart, at the end of it all it's still something that makes you happy, eat up and take a bowl to Mama Rea." Be happy folks, make Carbonara the way you want to make it and live the life that makes you happiest.

One should note that Hannibal Lecter actually drank "a big Amarone" with his liver and fava beans. Chianti sounded better live, so they changed the wine.

Yeah, and garlic is not standard for carbonara. This recipe is flawed, to put it nicely.
Cameron Kelsall I mean he did season it with salt and pepper, but he didn't mention that black pepper is one of the key ingredients for a real carbonara. Also pecorino should be used if possible (although parmigiano is a good alternative).
Actually pecorino cheese came about later on as it was more versatile for the Romans(it could be eaten fresh or aged). The Romans also preferred the Cheeks of the pig to be cured and used instead of today's more common prosciutto. Black pepper was added later when it was widely available (remember spices such as salt and pepper were often very expensive and only the wealthy could afford them).

Mirko Krizmanić well carbonara was first documented in 1944 when ingredients in Italy were VERY limited and scarse. Carbonara became popular with many poor coal workers and would often be served without pepper or bacon. After the war ingredients became much more readily available and the Carbonara of today was popularised in 1950.
You don’t make egg pasta with carbonara, the dish becomes too rich. Also no garlic.

Ordered Carbonara in Greece. Got pasta with heavy cream, chicken, ham, mushrooms. Literally non of the ingredients that a normal Carbonara has.

Dd Armc Be mindful that most Parmesan cheese has rennet in it, which is not vegetarian. You can find vegetarian alternatives, but they're not local to me so I have to do without or just use a really high quality cheddar.
if you live in a costco nearby go there and look for the cheese there because i found some with "microbial enzyme" instead of rennet so it is vegetarian im not sure if they would have the same for your because im in canada or maybe in your country there is no costco at all
