Apple Flips - Traditional Newfoundland - Bonita's Kitchen

  • Welcome to Bonita's Kitchen! Today we will be making Apple Flips, my childhood favourite snack and they are so easy to make. SEE RECIPE BELOW!

    APPLE FLIPS
    Ingredients for Pastry:
    2½ Cups flour 1 Cup, butter or margarine
    ½ Cup, white sugar 2 large, eggs
    2 tsp, baking powder 1 tsp, vanilla extract
    Pinch sea salt ¼ Cup, Evaporated milk or heavy cream
    Method:
    In a medium bowl cream together butter, sugar, vanilla, milk and eggs, continue mixing everything together.
    Sift in flour, baking powder, and sea salt into mixture continue mixing until all combined.
    When the dough becomes to hard to move with the spoon use your hand or kitten aid to form into a ball, then place in the fridge for about fifteen minutes while you are getting your apples ready.
    When ready remove dough from fridge and put on the counter top with a dusting of flour. Roll out with a rolling pin or bottle, place a bowl about 6” round to cut our pastry, cut all of them out first, then on one side put 3 teaspoons of your apple mixture, fold over the other side. SEE METHOD BELOW FOR FILLING!
    Then pinch the ends together with a fork, you will need a cookie sheet lined with parchment paper, place apple flips on and spacing them a inch apart, poke fork holes in the top of apple flips, then brush with some melted butter, pre-heated oven to 350°F for 20 to 25 minutes depending on your oven or until golden brown.
    When baked remove from oven serve hot or cold with whipped cream or ice cream, on its own.
    Ingredients for Apple Filling:
    3 Apples, any type ½ Tsp, cloves
    ½ Tsp, Nutmeg 1 Tsp, Cinnamon
    1 Tsp, Lemon Juice ½ Cup, Brown Sugar
    Method:
    Peel apples then cut in small pieces, place in bowl.
    Then add all spices, lemon and brown sugar, mix together.
    Then follow the top instructions for making apple flips.
    BAKING TIPS:
    Putting pastry in the fridge helps harden the dough and is easier for rolling out.
    If you peel apples in advance put lemon juice over them to stop from going brown.
    You can also dust apple flips with a egg wash to brown the top more.
    If you have leftover pastry wrap in clear wrap and put in the fridge for a week and use daily, also apple filling can go in a tub with lid and keep in fridge to use making more apple flips.

    What a nice treat for when the apples come in! The dough is stiffer, but reminds me much of the batter used in steamed puddings in England.

      Hi Brant: Yes the batter is much the same, it holds up to the filling inside and bakes so nice. We would have these in our lunch box for school, man i'm showing my age. :) Can't wait for apple season too. Enjoy Bonita

      @@bonitaskitchen Thank you for taking me back to my childhood! I remember hitting Marie's Convenience in St. John's to pick up an Apple Flip to bring home to have with Tetley Tea. Those were the days!

    Hi Bonita. Is dis de same recipe that you would use for ya pie crust? My pie crust don't roll out gud. Can you tell me what I'm doing wrong love please? Is I overworkin the butter and sugar or.....?

      Hi Lucy: Thank you for your message, this is a different pastry then the one for your pies. I have a pumpkin pie recipe on youtube you can follow the video on now to make pie crust. I will share the recipe with you here and give it a try.
      Enjoy Bonita
      Pie Crust:
      Pastry
      2 1/2 cup white or wheat flour
      3/4 cup "Cold Butter"
      1/2 tsp salt
      1/2 cup cold water add more if needed
      1 piece wax paper
      Method:
      Mix flour, butter ( chop in pieces) and salt together in bowl mix with your hand or food processor when mixed add water mix until it shapes into a ball then remove from bowl/mixer.
      Put a piece of parchment paper on the counter and sprinkle with flour then cut the ball into two pieces then put your pastry ball on top of it then roll until all even. Place 1 piece of the pastry in a pre-greased pie pan.
      With the remainder of pastry, roll out and make pumpkin faces and leaves or shapes of choice, bake in the oven in a separate pan for 15 minutes, remove from heat and cool.
      (Double the recipe if you like to make more then one pie and if you are using salted butter, don't add salt.)
