In fact today we prepare the KIWI LIQUEUR 🥝
As usual, I give you 2 alternatives 😉 with Vodka and alcohol for food.
You need:
KIWI juice 400 ml
Alcohol 96 ° 400 ml
Sugar 380 g
or
KIWI juice 300 ml
Vodka 400 ml
Sugar 120 g

Thyt used to be called chinese gooseberries but us kiwi's now call them kiwi fruit. One of our best exports.

Question, what would happen if you if you use twice as much Kiwi juice 800 ml, then condense it down to the 400 ml by heating and then adding the sugar? Would it improve the flavour or detract from it?

@@Spectacular-cuoredicioccolato can't wait to see it. Hope it holds its color too, green wine would be beautiful. I just did a rosemary wine but it lost the green color after aging for a bit. Came out a lovely gentle clear yellow.

I imagine is a great liquor! can you stop the oxidation of the kiwi juice by adding some lemon?
You can buy and add pure food grade ascorbic acid. It's very cheap and it will produce the result without altering the taste. But kiwi has a high amount already, higher than lemon .You can also blend the sugar in a blender to prevent the loss of the ascorbic acid due to high heat. Low heat will not turn it but you have to be careful.
Ps: ascorbic acid is vitamin c and it is what makes lemon juice used in this aspect

My favorite of this craft is black currant. Favorite means the only one I make every year. Best shape it shows by Xmas. For my greatest regret last year the session was so short that I just had no chance to make any.
Here you can buy 99% alcohol in the drugstore only 100 grams at a time. So I usually mix that portion with 200 grams vodka. With the fruit juice and the honey it makes up quite a marketable blend 🙂
