I agree. Keeping a show going after it has had a solid conclusion is a great way to make people dislike it. So many shows that people say "aw, I love that show, except season (insert number) onward, we don't talk about those"
Show had a great ending but the reason I think everyone wanted the series to continue was because of Bill. His dying message was the biggest mystery the show ever made and only now did we get answer to what it all means. And without spoiling the book of Bill it feels like they're certainly cooking something in the background if how it ends is any indication.
I think he just wanted to be out from under Disney's thumb, creatively. He's gone on record several times to complain about how much they stifled his writing. The Cipher Search and the Book of Bill were all him, because the Mouse had no/little say in what went into them.
They pretty regularly had him rewrite episodes and scripts that might contain "offensive" material, like a character saying "poophead" or two lesbians holding hands in the background of a scene. I don't blame him for not wanting to continue working for them. They don't have a great track record with treating their showrunners well.
A show ending on its own term > A show going for 20 seasons slowly dying bc the writer eventually loses his passion, I think the 2 seasons we got was the best possible outcome we got an amazing show that even a decade later I still consider the greatest cartoon of all time that had an amazing ending.
He didn't want to fall into the trap that many shows run into. By doing too many episodes, it would have been really easy for the show to become stale and not as good. As much as I wanted more episodes, I would rather had this outcome because it ultimately left a better image of the show when it ended.

Nothing can last forever. Gravity falls ran for a good 4 years and then ended on a proper note that wrapped everything up nicely. I couldn’t ask for a better ending. I would say we’re lucky to have the opportunity to be getting any extra gravity falls lore and content to any capacity.

There are plenty of Gravity Falls comics made after the show, that are practically just more episodes, and the Book of Bill gave fans SO much content, (I know the thought of reading a book may be hard for you.) Alex has said that he would still love to make even more in the future. He definitely got sick and tired of Disney censoring everything he did, they made him change the party invitation 3 times for summerween, they made him change the Cupid episode multiple times for multiple reasons (including genuine homophobia) then they started using his IP without his permission to make books on their own, then they censored Stan’s fez for the entire show for Disney plus. He wasn’t lazy, and he wasn’t tired of making gravity falls, he had a solid one and done summer storyline that he wanted to make while being hounded by Disney for more.

As much as I would LOVE a season 3 of GF, Alex gave us a great ending. It wasn't uselessly drawn, and it was squished into the last few ep. It was amazingly paced with great efficiency leading to a satisfying ending, an ending that makes you want more, but still fills you up.

A final season of 18yr old Mable and dipper going back to gravity falls to only discover the favorite triangle is back and he has an army of other reality warping villains who are hungry for action. Dipper discovers a book made by something on how to defeat each villain. It would be repetitive, but like why not. You already established that there are other beings like bill, why not run with it
