I went to Catholic School and the guy who ran the building and finances for the whole place was a priest who spoke 5 languages and had 3 or 4 different masters degrees ranging from literature to biology. He was my latin teacher, I asked him a pointed question once, and he paused and asked "what does your father do?" I told him my dad was a carpenter, and he said, "ahhh I see now I find the best thinkers are people who actually have to get the work done. They actually have to deal with how the world works directly." That's Tyson here. He knows. He's fought. He asks the exact right question. "What is the purpose?" The Aikido wrist grab training comes from someone grabbing your wrist when you have a Knife or other weapon. Aikido is a defensive fighting style that came from AikiJitsu, the fighting style of the Samurai

it is teaching a principle of how to use a weakness in the hand and how to break free from someone grabbing your wrist or other parts of your body. that weakness is the thumb. for instance if some grabs your wrist you twist and pull away towards the thumb try it out. it is pretty cool. now my personal opinion is aikido is not a viable martial art for a street fight but that doesn't mean someone very skilled can use its principles in other fighting techniques
In a struggle, someone might grab your wrists, but from underneath with your arms going up. In a mugging, you might have a weapon pointed at you, so physical contact is unnecessary.
For people talking about its use in a fight or in a real confrontation, the original man who did the demonstration did it as an example to demonstrate aikido and how in technique works. Its not something used in a fight, only a demonstration to showcase how the art works and why its effective, even with a major strength difference.
